The stems actually have a lot of nutritional value and should be utilized. The best way is to give a light rinse under faucet then chop then put into a water bath and drain three times. It’s slightly labor-intensive but you can make a large pot of greens at last at least four or five days this way.

People don't realise that vegetables are time consuming to prepare, especially if you're also talking stalks - at least half an hour standing at the sink washing spinach, potatoes, beans of all descriptions, legumes, okra (uncut of course!), my God how does my mum do it? We used to make a game out of prepping bunches of fresh coriander. Thank you for outlining this! :)

Washing in pure water doesn't get rid of the pollutants on spinach. Rinsing the leaves with pure water then soaking in water with a table spoon of baking soda for at least 10 minutes ,then discarding water and rinse leaves properly make them free from contaminants.

I'll use at the Hollywood Bowl. (Just a tip for anyone using apples in a salad, use a presoak salt water / lemon solution to keep apple slices from discoloration.)
