We got pineapples on sale! This means it is time to can our pineapple for the year.

Recipe for canned pineapple chunks
Cut pineapple and put into pint jars. Make sure they are pushed down pretty well. Fill with water or simple syrup. Clean the lip and put on your lids fingertip tight.
Waterbirth can for 15 minutes once it comes to a boil.
Scrap juice
save your scraps and put into a pot. Cover with water and boil for 30 minutes. Strain out the chunks and put into jars. Water bath can just like the pineapple for 15 minutes.
We spend $6.45 on 5 pineapple and got 8 pints of pineapple chunks and 10 jars of juice. That comes out to .36 a jar!

We kids used to like to eat the cores of the pineapple. Mom would quarter the cores for us to gnaw on. That was about 60 years ago now. She one time actually put the quartered cores into a jar and canned them because she had room and an extra jar, just an experiment, and they turned out great. We had snacks off season. Mom didn't use a tool to free the pineapple but would take a knife and thinly slice and dig the eyes out by hand, and that became my job (which I hated) when I got old enough to wield a paring knife. I think she got more fruit that way, but your coring tool works great, too. Thanks for sharing!

Thank you for this!!!!! William is trying to grow pineapple trees in my kitchen window.....Im just leaving him to his own devices there. We have a pineapple corer and we love it! Also....composting - Have you heard of Lomi?! My Mom has one and she got me one for Christmas! No smell and it turns everything to a super rich soil! We love it!

I tried growing one once and gave up. I’m going to look up Lomi now! I always add weird things like that to my wish list and they often show up at Christmas. Glad you are watching and hope you are enjoying. Hope you had a good day off😂

one of these days i hope to attempt canning! Never canned before. Everytime i made jellies and jams i threw them in the freezer (after they cooled of course - lol) I love your wood and sunset paint work! Beautiful ! I love sunrises/sunsets/ especially over the water.

another FABULOUS video! Thank you so much Ali, I can’t wait to do this. I am definitely one of those people who feel overwhelmed play the thought of pressure canning it seems daunting to me and I’m afraid of botulism. I’m one of those if I didn’t have bad luck I’d have none at all lol which I don’t really go on about saying too much but it’s definitely a threat in my life😂Anyways I love the thought of the pineapple and all of its nutrients thank you for mentioning that! I’m gonna have to get one of those core thingies. And those cameras can be expensive I think you did great with the videos that you make. Who wants them to be shorter? We get to see everything as you do it and explain it and none of “you” is edited out. Love your commentaries which you call rants…I always learn something and am inspired by what you say. For example had no idea what Fingertight meant or why it’s important. tip jar , wouldn’t have thought of that, hissing, wouldn’t have known! All info you share is so highly applicable and wonderful to listen to! And your isms demo how down to earth you are! Thanks again Ali, hope you made out ok in the storm❤ p.s. I love your paintings!

@@elizabethhendriks9030 Forgot to mention that the only veggie I worry about botulism with are green beans. I make sure to pressure can them when we do them in the summer. Water bath canning is easy and super safe if it is a high acid food, jam, jelly or anything with vinegar like pickles.

@@LittleHillHomesteadGa oh that’s great! Thanks for sharing that with me I am so wanting to make pickles but not the refrigerator kind. I really want to have them on the pantry shelf so I can just have them on hand. I love knowing this! I didn’t have much luck with my garden cukes last year..I had bought a Ball canning instruction book, as I had hoped to do pickles. when they didn’t grow I didn’t even pick the book up. I have so much to learn🤪! i’m on the sidelines with my handSurgeries for this spring and this fall so I have decided not to plant anything, instead just study and learn for next year. Thanks so much I really appreciate your message!

Hi, Ali, I just picked up 6 pineapples at Kroger for 88 cents! I too wait for the 2 times a year it goes on sale. A few months ago, I got that pineapple gadget in the clearance section also at Kroger but mine in plastic. Thanks for demonstrating how this works! I rinsed mine fruit in vinegar. That was fast! I'd be interested in how you wash the outside. I haven't cut mine up yet. :) Thanks!

I use a sponge with a little vinegar to clean the outside. They are so easy to can and so tasty! The pineapple gadget is a game changer! Thanks for watching.

You're supposed to use the yellow cutter on the shaft before you remove the pineapple from the shaft. You'll have to try it next time and report back. ... My pineapple cutter is older, before the yellow cutters were incorporated. I have yellow pineapple cutter envy. 😂

How many jars and what size(s) should a new canner get?

Jars get super costly. If you can find them at thrift stores for under .50 that’s a good deal. I’d buy a 12 pack of jars when you plan to can something. Ace hardware, Target and Walmart are the best price for new jars. I use mostly pint and quart jars and I’ve been collecting them for years and have a few hundred. You will find you need a bunch but if you can one thing each month that would not be an overwhelming cost up front. Also, ask loved ones if they have in under jars.

I often see bubbles but I’ve never had an issue with it. Some bubbles are normal.
