Considering a 2 liter of coke costs less than a small bottle of soy sauce, I imagine the soy sauce chicken costed significantly more to make. So as a budget option that coke chicken might not be crazy.

You might even boil down the coke to a little bit of a thicker consistency, so the flavor is more concentrated. Maybe that solves the "not so flavorful"-problem

Good quality soy-only soy sauce is even more expensive. Even fake soy sauce made from hydrolyzed protein and caramel color and salt isn’t all that cheap!

I used to work at a BBQ place that marinated the chicken in a mixture of coke and dr.pepper along with orange juice and some seasonings and then smoked. It was actually the best chicken I've had from a BBQ place. Obviously boiling chicken in soda is very different.

There's actually a Cantonese dish of coca cola chicken, but it's usually just braised wings and you reduce the coca cola mix until it becomes a thick gravy

For most Cantonese recipes for the soy sauce chicken, once you bring the soy sauce to a boil, you drop the chicken in, cover, and then kill the heat. The chicken tends to be more tender and juicy than having it cook on a full boil.

@@caljs Yes but because he worked in a restaurant, he fully understands that he isn't a chef. He doesn't consider himself a chef and neither do I. And I've been to culinary school and much, much more. But I'm no chef. He is a meat enthusiast and cook at most. Hats off to him though for making a career out of entertaining food. Most youtubers think they are Chefs but Guga is very humble and understands his limits. That's not to say he isn't capable but he has a lot to learn, as do I.

Hi Guga I am from South Africa and we often cook chicken in Coke. I normally boil the chicken in the Coke, then remove it and immediately throw in some potatoes to boil in the leftover Coke the chicken was boiled with. After that you can pour some Coke in a pan and reduce it until it becomes a nice sticky sauce. Then I put all the Coke boiled chicken pieces in a oven pan. Add the potatoes and some seasonal veggies and pour over that reduced Coke sticky sauce and wack in the oven with the grill function on and when nice and golden and sticky take it out. Enjoy it just like that or with some basmati rice... Its DELICIOUS!!!

Here in the Philippines, we have a similar recipe. However, we mix soy sauce and Sprite, along with some aromatics (garlic, ginger, shallots, peppercorns, bay leaves). You just boil it and it turns to a similar brownish color and is extremely juicy as well.

I've cooked using coca cola many times, but chemistry class many years ago taught me not to boil or superheat sugar unless I wanted blackened toffee lol so I prefer to use it in slow cooking!

A restaurant I used to cook at would boil chicken gizzards in Pepsi and garlic until tender, then beer batter and deep fry them. So good! The pepsi isnt strong, but gives a flavor pop and a little different!!

Wow this video unlocked an old memory of mine. Back in the day when I was a sous chef I had a chef show me a recipe that this video reminded me of. We reduced a 2 liter of Coca Cola with a handle of Captain Morgan rum with onion, garlic, bay leaves, black peppercorns, and cilantro. We reduce it until it's thick like a syrup and then we add it to a sous vide bag with pork butt and cook it low and slow until it's super tender. Once it's all tender you can eat it like pulled pork, or throw it on a flat top grill and get it all crispy and caramelize the sugars a little bit. At first I was skeptical but it was honestly so good. I think I'm going to braise some chicken thighs in a Coca Cola/Soy Sauce type situation soon. Thanks for the inspiration Guga!

Guga Foods, asking the food questions everyone else was afraid to ask since 2015. Love what you do Guga, never change. I really wish my father had lived long enough to partaken in your channel. He was a kindred spirit, (with a little dash of Josh from mythical kitchen thrown in) always doing irreverent, wild food experiments which flew in the face of conventional knowledge. I wonder the same thing! Same thing with shows like Masterchef. Are the judges eating the food cold? There are so many contestants to go through before they get to the last dish.

@@D71219ONE For masterchef I actually worked at the show and I can tell you the food was very cold when the judges tasted it. Normally we would put the cooked food in a fridge and go on lunch break between finishing cooking and shooting the judges eating it so the food was fridge cold at that point.

I make coke cola ham at Christmas, but I have to make it at Easter as well now my children have gotten older, as well as Aunts and Uncles who love it, I boil it with brown sugar, onions, carrots etc, then take it out and put it in the oven so it’s perfect, the liquid left from my boil is reduced to a thick sauce and poured over the ham, remember to remove the black stuff that rises while boiling, just skim it every so often.

A lot of people use diet coke instead of regular coke because of the sweetener instead of the sugar - you should try doing both to see if the sugar content makes a difference, i would bet there would be less caramelisation left on a diet coke cooked one, but i’m curious if the sweetness would be as affected?

I've been making Coca-Cola chicken since the 70s! It's really good. I don't boil my chicken in it, I bake mine in the oven, but it's the same concept. I like the bit of a sweet taste, not as sweet as barbecue, but just enough for flavor, and it always comes out tender and juicy. In the oven, some sort of magic happens and the caramel coloring disappears, leaving clear broth that is delicious. The sugar also mainly seems to disappear. I love Coca-Cola chicken!

I've got a question. Are you saying you *marinade* the chicken in Coca-cola and then bake it or are you putting the chicken in a tray full of Coca-cola and then *stewing* it in the oven? Curious about your method.

@@uqox Don't know how he do it but my take is this: - Marinade the chicken in coca-cola - Bake the chicken in the oven on low heat so it doesn't burn (since the skin has some sugar on it now) - Boiled up the marinade with some starch to make a sauce

I have seen what's called beer can chicken where sometimes they will use coke. You stand the chicken on the can, they even make specialised stainless steel things now for it. It's difficult to do in the oven as a lot of them aren't high enough to take a chicken the other way up on a stand.

Hi Guga. Here is a video idea for you. I recently learned that snacks that use MSG sometimes also contain Disodium Inosinate and Disodium Guanylate to enhance the effect of MSG by 20x-30x stronger (for example, Doritos, Pringles, etc). I'm not sure what ratio/blend of MSG, DSI, and DSG is needed, but I'm sure you can find it somewhere. America's Test Kitchen + Kenji Lopez Alt have a video that discusses some of the science behind it. I was thinking the experiment could be this: 1. Steak + SPG (control) 2. Steak + SPG + MSG 3. Steak + SPG + MSG + DSI + DSG Since the MSG, DSI, and DSG has sodium in it, the salt in the SPG might need to be reduced a bit, but it's up to you. Anyways, I hope you give it a shot! Also ngl leo is kinda annoying no hate but he just seems quite extra we need the og angel or mamau to review them food

I can't say I've ever seen poultry boiled in Coke, but I have seen Coca-Cola chicken where the Coke is used to make a sauce for chicken. I've also slow-cooked with root beer, which I suppose is the same concept as what you did, without the burnt sugar issue. Soy sauce boiled chicken is always going to have more flavor though, because salt is a natural flavor enhancer and Coke just doesn't have close to the sodium levels of soy sauce (~37 mg sodium per cup of Coke vs 14,000 mg sodium per cup soy sauce). Maybe instead of adding brown sugar like you did to the Coke, add salt? I mean, there was already more than enough sugar in the Coke as it is, and you could probably add enough salt to act as a flavor enhancer without making it taste salty.

Colas can be surprisingly handy when it comes to cooking. I know Dr. Pepper makes for a great basting liquid for hams and I've heard of home made BBQ sauces and braises that use cola and rootbeer. And this is something of an aside, but leftover coffee makes for an AMAZING addition to anything with pork.

Coca Cola, garlic, ginger and some very basic asian spice mix (usualy something from thailand because that's easier for me to find where I live) is like my go to marinade for barbeque, it's great! I'm with Angel, Coca Cola can be used to great benefit in cooking!

I've had beef cooked with cola a few times (braised I think), but not chicken. It works surprisingly well as a base flavor, although a touch too sweet for my tastes. It worked better as a small dish rather than main course, a whole meal of it was a bit much for me.

Cooking chicken with coke (the soft drink) is quite popular in Hong Kong as well. And regarding to how soy sauce is more expensive than coke, no we don't just use soy sauce but usually mix it with water so you can't just compare them like that. And they taste, pretty obviously, different and give you a different flavour.

Here's something I don't think you've tried: Fermented Shrimp Paste. Also known as BAGOONG in the Philippines and most southeast asian countries. Commonly found in most asian supermarkets or well stocked asian sections in mainstream american supermarkets (ie not that hard to attain). Perhaps try initially as a compound butter? Or a dry aging method? Or a marinade when putting into sous vide? I'd be interested to see if you're down for trying, Guga.🤔

Over here in Ireland and the UK a very popular dish is coca cola chicken and for a lower calorie version, diet cola chicken and it is delicious. You can also make a quick sweet and sour sauce recipe with orange soda or cola (and diet version for lower calorie) and garlic, ginger, soy sauce, vinegar and pineapple pieces (you can even leave those out and it is still a great, quick version). Much simpler than making a sweet and sour sauce from scratch and way easier to balance the sweet and sour taste.

Both good options, a small additional step of marinating the chickens would really improve the depth of flavor! I knew the cola one had promise, one of my favorite holiday recipes involves baking a ham in cola, brown sugar, and spices, always tasty!

I feel like this was an unfair comparison. Coca Cola only really has the Caramel Flavoring going for it. It isn't a Complex Flavor. Soy Sauce on the other hand is full of Umami. When used in cooking, it is a Complex Flavor. It also has Salt, which helps improve the flavor. The Coke, doesn't have enough salt. Even though your rub contains salt, there isn't enough salt in Coke to not wash out the salt in your rub. I feel if you had replaced the Brown Sugar in the Coke Boil with a decent amount of Salt, your results would be very different.

I like to cook ribs in my slow cooker with cola just season the ribs heavily then put them in the slow cooker fill with cola just enough to cover them and cook low and slow all day when done drain off the liquid add your favorite bbq sauce mine is Hawaiian bbq then saute or grill for a few minutes to make the sauce sticky and they are great
