I Can’t Stop Eating This Kale and White Bean Sexy Salad- trust me- it’s insanely good ! Its $20 a pound at @erewhonmarket but I think I figured out their recipe pretty well and it’s probably less than $6 a pound to make. And I highly recommend that you do! The recipe is below. You’re not going to like the fact that I don’t have exact measurements but I’ve made it a few times in the last few days and each time, it’s delicious no matter what. 1 large bag washed and cut curly kale , about 8 cups Juice from 2 lemons or about 1/4 cup lemon juice 3 tablespoons olive oil 1 1/2-2 tbsp maple syrup (erewhon definitely used more but I don’t think you need to. Theirs tastes a lot like maple syrup) 1-2 tsp Dijon mustard Pinch salt and pepper 1/2-1 can white beans, rinsed 1 avocado, cubed 1-2 tbsp each of pumpkin seeds , hemp seeds and sunflower seeds. But if you don’t have all 3 seeds in stock, it’s all good. I love that tip about massaging up the kale because it’s such a hearty green. It needs the extra love and I am so glad I am nowhere near that overpriced market. I’ll just make it at home for sooo much cheaper. Great simple dressing.

usually dressed salad gets better the longer it stays in the dressing but it depends on whether there's anything in the salad that might get soggy. in this case i would just prep with dressing
Ok so first of all, why shop at the world's most expensive grocery store? I'm sure h couldve made that salad way cheaper! And the name of the store spelled backwards is nowhere... I'm sorry I'm not guna spend 20 bucks on a salad... I can get a whole head of lettuce for less than 2 bucks... I don't get it!
