You did good, I mean for an Igbo girl who did not even grow up in the Niger Delta. A few quick advice: 1. The akawun(potash) does not thicken the soup, its job is to prevent the palm oil from floating on top of the soup like you see in any other palm oil food/soup. 2. You do not have to grind your garri to a powdery form, just soak it in water at the beginning of your preparation. Also, make sure it is a bit watery when you add to the soup. 3. When cooking, add the pepper to your mix(water and choice(s) of protein) allow to cook for a while then add the palm oil and the preferred seasoning(you add crayfish, perewinkle etc); also allow this to cook before adding the potash(which you would have soaked as well from the beginning). Let this mixture cook for a while over low heat while stirring intermittently to prevent an overflow. At this point you add your soak garri and stir as you add. P.S. The job of the garri will be a lot easier if you dissolve edible starch in it. At this point your OWHO SOUP is ready whenever you are ready!

I am an Urhobo girl my dad is from Okorodafe and my mum from Sapele. I can tell you this is basically Owo soup the only think missing from this lovely meal is Usi (starch). But everything else is amazing and your making me run to get some now. My mum adds periwinkle to the soup to add texture it’s amazing.

My sister you try,you can soak the garri with cold water,you won't see lumps,for less use of potash,we use native palm oil and starch. Thanks for trying out my native soup.

@@FloChinyere the native oil is thicker than regular oil,and we mix native salt with the potash. You will need to visit an urhobo shop for this ingredients, like I do herein London

@@FloChinyere native palm oil in London are Trofai, Ghana fresh etc. They are called palm base or palm fruit extract. The Igbos use it for ofe akwu.

Actually the potash is not a thickner rather to give your owo soup a bright colour,flavour & taste. Normally the Urhobos use fermented palm oil known as native/Urhobo. It's very thick & expensive. Owo soup can also be prepared with semi dried water leaves & it's also delicious. When next you prepare Owo soup add shelled periwinkle & shrimps, you will thank me later. Well done!

Hi, we add the garri powder first before the water comes to a boil and keep stirring constantly. Then dilute some starch in cold water and add to the soup for thickening after adding native oil.

Yes o, I believe that when we break it down, we can carry everyone along. You can scoop some soup on the excess garri and eat it with a fork. That's how I eat the excess cocoyam from my bitterleaf soups too.

A simpler way to blend your garri is to add it to a lot of water in a blender. The garri should be the base of your soup. You add starch at the ending of of the cooking. Palm oil is added after the garri base has cooked out to form a sort of thick peppersoup. I cook out the palm oil. Never use salt with starch as thickener - we as Itsekiri only use native salt. I am not sure of Akaun cause my mother who is Igbo but with Itsekiri mother never put Akaun, to the best of my knowledge. Anyhow, you did well. Any knowledge in cooking is experience gained. Thanks for sharing

Try blending the garri with water in a blender to make a thick paste that you will add to your peppersoup base that you have put spices and unripe plantain into. Once cooked through, mash half the plantain and add to peppersoup garri potage. We Itsekiri use native salt, NEVER salt because soup will never thicken. We add starch at the end of all ingredients. Delta Itsekiri MUST have garri in the soup. My mother's secret was a little ground onion into the soup. The Binis add tomato and onions into their soup, which is sacrilege to Itsekiri. However in cooking, anything goes as long as its sweet

Chei Aunty Flo, This owho soup is calling my full uhrobo name oooh :) And I have refused to learn how to cook it, but you have inspired me. Thank you so much, it looks very very delicious. Kudos to you for making the garri yellow with palm oil, another idea I have learnt today. I think I need to need use my Tapioca starch to make Usi (Uhrobo starch)

@@FloChinyere Nne,most definitely,i will give it a try,i will use all the essentials except snails,my kids don't eat snails,but as for me,anything goes,though in moderation.Can i use yams,to substitute for the garri?just curious...cos,yams can also be used as thickner in some soups.Daalu lolo...😘😍

@@jennysspace3635 they have two options for thickener: starch or garri and both of them are made from cassava. Using yam may alter the classic taste but I guess at the end of the day, what matters is that you enjoy whatever results you get and possibly add the soup to your family menu. 😍

Good job ma. Biko aunty Flo, potash is not good for pregnant woman. Pls advise ur viewers on this. I was about to quickly prepare my own owho soup, until it occurred to me dat potash is not safe for pregnant women. I'm urhobo, but I have to use only garri as thickener or avoid dis soup until after delivery.

lol! I actually chuckled when you added the oil to give the yellow Garri. You are so innovative! Quick question tho,is there any reason why you dont make soup and stew in your pressure pot like you mentioned in the video? I'm just curious o, after your video on pots I'm trying to learn proper pot care. Thank you

Iyabejii it's because I don't want oil and other coloured ingredients staining the pot over time. LOL We can twist these to get what we want. Palm oil is sprinkled on garri after grinding to get yellow garri. Adding palm oil after the fact achieves the same objective. :)
