Not exactly the same recipe, but that reminds me of me! I used to request fish and chips every year for my birthday, which is also fried and comes with tartar sauce and usually some kind of cabbage salad. Also amazing onion tip!!
Leto version: use avocado oil mayo, pork rinds instead of panic and skip the flour? I wonder if one could just use egg wash and pork rinds instead of the first flour coating.
