Did you know mentaiko was created by Koreans who lived in Japan and looked down on by Japanese people during Japanese occupation of Korea? Isn't it crazy how it's popular in Japan now?
My mother would send me down the mountain in Yokohama in the 1960s to buy clams. I would run to the market and back because i knew what was for dinner!

I still have gyokuro from my Kyoto trip (bought it from Ippodo Tea) and I could not brew it properly without the tea being VERY bitter (i followed the instructions for brewing per the bag). I tried with slightly warm tea which reduced the bitterness by quite a lot. I will try with ice this time

Thank you for this. I have a Zojirushi 4L water boiler/warmer, and I use it every day, so I do appreciate the importance of temperature relative to proper tea production. I have never seen ice used before. I will do that the very next time I make a pot of iced tea!
