Well i think the issue was he dried it first should have left the breadcrumb one wet and deep fried instead maybe adding a bit of cornflour into the breadcrumbs

The reason the breading didn't stick is probably because they were cooked sous vide first. I've seen a few other recipes like this and the first thing mentioned is the steaks need to be very dry. As for why, gotta remember that's almost 200 years ago. Managing temperature was more art than science, never mind it was pretty much all cast iron for utensils. Channels like Townsends that replicate stuff from that time (and earlier) make it much more understandable why they cooked a lot of stuff the way they did, pretty much out of necessity a lot of the time. And let's not forget you couldn't eat Wagyu in 1830, never mind refrigeration wasn't a thing yet, iceboxes was the best they had. I'm guessing even done properly the 'plain' steak would be better simply because the meat you are using (which looks freaking amazing) is probably 100 times better than anything they would have had access to back then. Still loved the video though, but stop dry aging Angel!

A decent sous vide circulator is pretty cheap, and with little planning you can repeat any of Guga's dishes. Just one time through is all it takes to break through those stumbling blocks.

Back when I used to work at a restaurant, we would let the onion rings sit in buttermilk for about an hour before dipping them in the beer batter and frying . I don't know if it was to help hold the coating but we hardly got running batter.

Actually I disagree with that, angel is a great addition to the channel, he is like a foil character in a story. In my opinion, angel is what makes this channel entertaining because of his wittiness and his dynamic relationship with Guga.

as someone that has cooked 18th century recipes for most of his life as an interpreter.. they fry in lard adding flavor and value and coat the steak in egg, mustered or other stuff depending on area to have the crust stick more.

Great first video in what I hope is a series. I would recommend in the future if you explain what the old recipe was at the beginning and make 2 versions of it: the original exactly as in the recipe (unlike here where it was modified to use sous vide) and your "improved" version to compare the difference. You also might want to read up how to read old recipes, by convention they neglected to mention important steps like salting or what amounts of spices to use sometimes. You can watch some videos by fellow RU-vidrs like TastingHistory or Townsends to see some examples. You could even try contacting one of them to see if they can help with the history, I know TastingHistory has done crossover videos with other RU-vidrs before.

I think once the fascination hits you, it'll never leave you. I started cooking or baking this and that at about 14. Just turned 60 now and I'm still learning and still fascinated. You can brush the sous vide fillet with mustard( Dijon) and the crumbs will stick perfectly. Also adding butter will brown the crumbs perfectly. Bone marrow came out perfect as always.

Loved the episode and I learned not to bread that cut. Something I would like to see. A butchering show explained that the Chuck Eye cut lays right next to the Rib Eye. They claimed you could cut what would normally be a roast into Chuck Eyes Steaks and they would have a similar flavor with a lot of good marbling, but for far less cost. I had my local butcher cut 4 - 1" Chuck Eye steaks so I could test it. I marinated for about an hour before cooking then patted it dry. I did a reverse sear at 250 deg F for about an hour and 15 mins until meat temp was at 115 def F. Then I pan seared on cast iron skillet using avocado oil and garlic-infused clarified butter along with a few sprigs of fresh rosemary from my herb garden. The cook came out really well on the reverse sear. My son loved his steak saying it was "perfect!". Mine seemed a little more fatty than Itypically like, and I think much of the fat didn't render like I hoped it would during the low and slow cook.The flavor was nice and beefy, but there was a little more chew to the fat for my liking. I would like to see a Sous Vide experiment to see if a Chuck Eye steak cut could be slow cooked until more of the fat rendered.

Guga, have you ever used a circulator to prevent avocados from browning? I've heard this can be done by placing the in whole at a certain temperature and time.

I think what you might be thinking as the old way might be, Parmesan Crusted Filet Mignon with panko bread crumbs, Parmesan Butter Crust is combined with herbs garlic and the bread crumbs into a roll and refrigerated after the steak is seared you cut a 1/2" slice place it on top and finish it off on the oven

I find if you roll the onion rings in Corn Flour before the batter, the batter sticks perfectly and you dont have to worry about any breading at all.

Recipe reminds me a lot of steak au poivre with the sauce for the steak. Very similar just taken to the extreme.

With the onion rings if you get rid of the little membrane in between each layer the batter should be able to stick better getting a better coverage keeping it from slipping out and allowing it to be more crunchy

if you don't want you onion ring coating falling off, peel the outermost layer of the onions rings skin (its a single and semi-translucent layer) before coating. Sticks WAY better.

Giga if you take the membrane off the onion layer's and dry them off before you come them the coating won't slide off

Years ago I worked at a fast food place and discovered that the tangy herby pickly flavor of tarter sauce is one of the best flavors to go with onion rings. When ever I order onion rings from The Habit grill, they are always agreeable to my request for tartar suace. My rule: Red is for potatoes and green and white is for onion rings. I don't want rings to taste like fries.
