In the south of Europe is not very popular. For example, in my country, Spain, people only eat in the south and east of the country, and even here is not very popular either. I am from Andalucia, (south of Spain) and I eat carp but very few people has ever tasted. Here we don't cook carp like her. We use to clean the fish, put in a bowl and cover with vinegar. We put garlic, salt and oregano too, and keep in the fridge for 12 hours. Later, we cover the fish with flour and frie with olive oil. Of course, you can use other fish or change the recipe with other spices. A few fish we use a lot too, even more than carp, is a shark (Galeorhinus galeus) we call "cazón", Mugil liza (in Andalucia we call "albur"), Barbus barbus (barbo), and mackerel. If you are courious you can look for "cazón en adobo".
