As a major fan of the Yudane method, as it has never failed to deliver everything it claims, the Milk Bread recipe makes perfect sense. However, I've yet to find a recipe, like yours, which combined both the fat/oil and milk to scald the flour. Makes sense though.

I wonder what you think about the Swedish "Hard Bread", mostly known as "crisp bread" around the world. It's hard, as the name implies (HARD bread, it's in the name...). It's a staple food here, and it's been that for many years. It's doesn't go well with any exotic flavours, but it's just so good just with butter, and the crazy caviar we have in a tube... We also have a crispy flatbread that we love, and fight over. Which one is the best? Well, that's why we never stopped fighting over it. I prefer them all. Home-made is the best!
