I tried this quick and yummy vegan Indian recipe | everyone loved this in the house. Poha

Flattened rice is a breakfast staple in South Asia where it is known as poha, pauwa, avalakki (ಅವಲಕ್ಕಿ), chivda, "atukulu” (అటుకులు) or aval (அவல் ) among many other names. It is particularly popular in India, Nepal, and Bangladesh.
Ingredients :-
first of all soak the Poha for 5 minutes with 1 tspn of lemon juice.
✅Poha or flattened rice - 2 cups
✅oil - 1 tbspn
✅curry leaves - 4,5 I used dry. you can use fresh if you have.
✅cumin seeds - 1 tspn
✅black mustard seeds - 1/2 tspn
✅dry red chillies - 2 counts
✅ginger paste - 1 tbspn
✅onions - 1/2 big size onion
✅salt - 1 tspn
✅turmeric powder - 1/4 tspn
✅coriander powder - 1 tspn
✅garam masala - 1/2 tspn
✅green peas - 1/2 cup
✅coconut powder - 1/4 cup
✅roasted peanuts - 1/4 cup
✅coriander leaves - 1/ 4 cup.

Poha or Flattened Rice is less processed than white rice and has more nutrients like iron, carbs, and proteins. It is light on your stomach and does not spike your blood sugar levels so can be safely consumed by Diabetes patients.
