If you substitute the pasta for rice (in the first recipe), you have the Japanese dish, Doria. I top it with an eggplant ragu, rather than a bolognese This could also be a gluten dree option for people :)

So I saw during my last grocery trip at Aldi here in MI, US, a tofu brick was only $1.65 and I was in disbelief. I've NEVER seen it so cheap and thought of you and Daniel talking about tofu prices from the podcast. So it's cheaper than ever to have meat-alternative protein, especially when it seems grocery prices just keep climbing!!
that's so cheap! yeah even though tofu has gone up in price, it's still cheaper than meat so I'll never understand when people say vegan food is expensive lol
My sister showed me a really delicious dessert with greek yoghurt! Just mix greek youghurt with powdered sugar, lemon juice and zest, and chunks of chocolate. It's sooo addictive!!

There are tofu brands that are made from pumpkin seeds it called pumfu, and there are chick pea based tofu as well. Whole foods brand makes it, and a company called Franklin Farms. That can be easily substituted for soy tofu.

I keep meaning to try the alfredo sauce... but whenever I buy cashews, I usually eat them before I cook with them! I think I saw someone use butter beans in a similar fashion, which I might do in a pinch! Thanks for the recipes!
I’ve been buying bags of Yupik cashew pieces on Amazon for this - they’re a bit cheaper than cashews at the store and because they’re pieces and not seasoned we are less inclined to snack on them. Also nice to have on hand for easy toasting and serving on top of stir fries and etc. I store them at the back of the fridge, which helps to keep them fresh but also less likely to get munched.

If you want to use a healthier meat alternative but still keep it “lazy”, Amy’s brand Sonoma burgers are amazing. They’re entirely organic and made of quinoa, mushrooms, walnuts, oats, and other assorted vegetables. I used it in a bolognese sauce recently and it was delicious!! 💚
I have found numerous disgusting things while eating Amy's unfortunately, and I may have ever been the only one, but I swallowed a band-aid, and bit into a bunch of pubic hair type hairs, all in one spot, in their pizza, so I stopped buying their stuff. 🌿

at a buffet, i personally sneak corndogs into the buffet so others can enjoy them. I hide 6 corndogs in my jacket pockets. it then, is a joy for me to see other patrons of the establishment eat my corndogs thinking they were part of the buffet.
you could also probably use something like 'just egg' (which is a vegan brand of egg substitute) and fry that up and add it instead. But that is a more expensive route.
