Memphis Dry Rub:
1/2 cup brown sugar
1/2 cup white sugar
1/3 cup paprika
2 tsp ground ginger
2 tbsp onion powder
1 tbsp garlic powder
3 tbsp kosher salt
1 tbsp black pepper
1 tsp celery seed
1 tbsp cayenne pepper
1 tbsp chili powder
2 tsp ground allspice
2 tsp ground cumin
1 tbsp ground mustard
Creamy Memphis Coleslaw
Dressing:
1 cup mayo
3 tbsp Apple cider vin
1 tsp celery seed
2 tsp sugar
1/2 tsp salt
1/2 tsp white pepper
2 tbsp mustard
1/2 small yellow onion grated
1/2 head green cabbage finely sliced
1/2 head red cabbage finely sliced
3 large carrots finely sliced
Pork shoulder or butt:
Cover pork shoulder with homemade Memphis dry rub
Smoke with hickory and pecan wood at 275 until the pork hits an internal temp of 165 degrees
Wrap it up with butchers paper and continue cooking until it hits 204 internal
Rest for 1 1/2 hours before shredding up, add more seasoning if necessary.

1/2 cup apple cider vinegar
1/2 cup water
2 cup ketchup
2 1/2 tbsp molasses

2 tbsp honey

As a former Memphian I can say that I definitely approve. The only time I eat coleslaw is on a pulled pork sandwich. It's not mandatory but you're really missing out if you leave it off.

As to your request for info on NC & SC, I am a military brat (USMC) and we lived in both states for many years. NC and SC used to be one territory (a pre-Colonial America British colony.). Then they became divided and as settlers arrived, different groups settled in different areas. Eastern NC had large landowners, shipping trade ports, etc. Therefore they got access to more varieties of food stuffs. West of the Fall Line (where eastward flowing rivers and streams came off the Piedmont areas, and resulted in waterfalls, rapids, etc. This stopped westward transportation at a large scale, as now, supplies had to be repacked and transported by horse, mules, canoes, and wagons vs boats/ships. The I-95 runs approximately along this dividing line - the Fall line I mentioned. The western side was then settled by later groups, predominantly scotch-irish who were more independent, settled on independent smaller holdings, spread out from one another, with smaller towns where trails crossed... 'Crossroads'. They therefore had less variety of foodstuffs or grew it themselves. This is a very short explanation, too short really. But one outgrowth of this was that for example, what we now call BBQ sauce was different in the Eastern part of the state vs the western portion. In Eastern NC it was vinegar (with pepper) based, while in Western NC it was tomato based. In SC and parts of Georgia, they had an initial influx of Germans who used mustard in their BBQ sauce. To this day, the type of BBQ is still a regional identifier. Just one example. In the east, due to larger rivers, estuaries, and seaports (Wilmington, Bath, Charleston, etc... seafood and aquatic food (oysters, etc) were eaten as part of the regular diet. Flounder is very popular along the coast, with Hush Puppies (deep-fried corn fritters), and shrimp is very popular. Eaten raw, or in stews, oysters were a major food source, and in SC (Myrtle Beach, SC...they still to this day do 'Steamed Oysters' - in the shell, seawater being steamed in cook pots over open flames served with Hush puppies, coleslaw, and usually Pepsi (Pepsi originated in New Bern, NC), Coke cola in Atlanta and Dr. Pepper in Texas. The western parts of the states depended on wild game, some cattle, hogs, for red meat in their diet, corn products vs wheat products. These are all just off-the-cuff references for you. Read up on PAT CONROY''s books about life in SC and he gets into food references in his books. Charleston is a Foodie town with lots of new stuff and old stuff revisited takes on food. There were also large black populations pre and post-civil War with a lot of wonderful down-home, small village eating (Fish Fries...an event along river towns... and the home for SOUL FOOD...don't miss out on making any of those dishes. Then of course there are Pecan Pies, Sweet Potatoe Pies, Mud Pies, et. Crayfish are raised commercially in the South, - old plantations in eastern SC, parts of Louisiana, etc. Don't miss out on Crayfish and Grits (it's just not Shrimp and Grits being a popular dish). Oh, before I forget...catching Blue Crabs in the rivers, and estuaries, using a pole net and a chicken neck on a string was a fund thing as a boy...and Blue crab is likely the best-tasting crab you can find... (perhaps save that all for Virginia, Maryland visits). Hope this all helps a bit. Paul Hershey, Redondo Beach, CA

As a pretty big BBQ guy myself, I'd say you did a great job. You'll get tons of comments on the temp you used, lack of smoke/bark, use of a pellet grill vs a traditional offset, wrapping vs no-wrap and so on and so on. Ignore them. Smile and move on. Pulled pork is one of the easiest cooks in the BBQ world but people love to over-complicate it. Btw, I love the addition of Marcus getting on camera for the tasting. The kid has good vibes, ya know? 😅

Agree. BBQ snobs are the worst. His temp was high for a pellet grill 😂. Should have been around 185F for a few hours to build a good bark from the smoke.

You can get amazing BBQ from a pellet pooper for sure. It's worth a little trade-off for the ease of use, and the vast majority of people would get far worse results from an offset since fire management is a skill that takes a long time to master and the vast majority of offsets are cheap garbage.

@@jonathanwilliams1974 Very true. I started on an offset years ago and made alot of bad bbq early on. But once I learned fire management, nothing else compares taste-wise (to me). Along the way I've acquired a pellet (GMG), a gravity charcoal (MBLT), a WSM, a kettle and the list goes on. They have their pros and cons but flavor-wise, nothing beats the offset. disclaimer: that's my personal preference...lol

Carolinas have a unique take on BBQ pork shoulder which influences BBQ in Georgia. When I last lived in Georgia I would help with a BBQ fundraiser every year. I think I recall we used hickory, but a big part of the technique was a periodic mop with a combination of mustard and vinegar rather than a dry rub. While a lot of places also offered ketchup based BBQ sauces, vinegar/mustard sauces were more traditional. The sandwich is an option, but also served with BBQ sides works. Not sure if this is helpful for brainstorming given the similarity to this video.

I'm from Georgia and one of the best dishes I've ever had was while I was visiting Jekyll Island. This a family owned restaurant had this Shrimp N' Grits recipe that had been passed down from generation to generation. Perfect shrimp, grits, and creamyness. Would definitely try making this one!

Any time I need to shred pork, I place it in the bowl of my stand mixer with the flat beater attachment on and set it to a low speed until I get my desired consistency. That’s just my personal preference and I love the results it gives

Sonny - love your new series and have tried many of your recipes which have turned out great. A critique on this one if I may. Most of your technique is right - good use of rub, good wood selection, good wrap temp/materials, good done temp target. A few things to take it to the next level... 1) Smoke it at a lower temp (225 F) - yes it takes longer, but you do this to get even cooking and better bark. 2) I highly recommend dry brine (kosher salt @ 1/2 tsp per pound of trimmed meat) - you could've run a taste test on your two butts to verify a better result :) 3) when you pull with gloves on - put white cotton liners (search on Amzn many options for

He doesn’t have a shtick. His shtick is being the best damn cook on youtube. He’s a little more high energy than he he used to be (go watch his old vids) but he doesn’t rely on any gimmicks. The fridge is just funny, it doesn’t compensate for anything because he cooks better than anyone else you’ll find here.

NC resident here, since moving down from NJ about 7 years ago. First off, you can start your own sub-series of pulled pork just within NC let alone the whole south. Prior to this Nashville episode I bet people would’ve told you to do pulled pork to represent either NC or SC as well. Secondly, besides how serious they are about bbq down here I’ll list a few foods that are awesome in NC and I’d basically never encountered living in the northeast: -pimento cheese -country ham -deviled ham -southern mac and cheese -fried green tomatoes -collard greens

Try this twist on your coleslaw: Drain a can of crushed pineapple, really dry, saving a tablespoon or more of the juice. Add the pineapple to your coleslaw. Add the juice to your coleslaw dressing. It goes perfect with pulled pork sammies!

I never really had celery seed until I ate these pulled pork sandwiches out of a food truck. And same thing- I kept biting into them thinking "wtf is this thing I'm eating, I have no idea what it is"

Looks pretty epic. A trick I've learned after 20 years of smoking butt...after it hits the stall, just put it in a roasting pan, cover with foil and let it finish. You retain ALL the juices and collegian rendered out over the slow cook. You don't need any more smoke. Let it rest then pull and it reincorporates all the melty goodness. Then finish with a little Carolina vinegar sauce. BTW I'm totally making that chipotle BBQ sauce!!

I feel sugar involved rubs can burn on a long smoke. I find it best to do a simple texas style rub (salt & course black pepper) then season and sauce after the cook is done if necessary/desired.

Another great video! If you want to save your hands from the heat when pulling the pork BBQ, get some inexpensive cotton gloves and put under your rubber gloves for insulation. You might have to get a size larger rubber gloves to make it work comfortably. You now have insulated gloves, the outside are disposable and the inside is washable for reuse. We've been doing this for years with competition BBQ. If you're doing a lot of cooking you might want two pairs of cotton gloves, if one gets wet and it's no longer a good insulator. Either replace the gloves or throw the wet ones on top of the smoker to dry, obviously without the rubber gloves on them.

Dude, I like your emphasis on these meats and sauces. Pulled pork is probably the best sandwich, I ever had. It looked almost exactly like this, so this must be the best sandwich in our universe at the moment. I'd like to see your idea of eggs benedict, for real. Or like a country fried steak, with gravy. Or a shrimp and grits, with Cajun sauce. Fish tacos with homemade street sauce. Chicken with creamy lemon butter sauce and vegs. These are some of my favs, right now as far as meats with sauces. The rest are Asian sauces and Hibachi, which you cover a lot. They are all super delicious meals, sometimes healthy too. A little more butter never killed anybody, right ?. As long as I'm not huge, then oh well.
