starter is like natural yeast which helps the injera batter to rise (traditionally we don't use any raising agent, we use the sourdough starter), that is what give the injera the air bubbles/eyes as we call it!
hello dear, yes you can- just add about 2 tsp of baking powder to to the batter (mix the baking powder with warm water & add it to the batter) are you intending to make it just from all purpose flour?

Hello dear, the one I was using on this video is called “wass”, I bought it from local Ethiopian store in Canada (the only downside to that grill is, it has poor electrical conduction & doesn’t last that long) you can use non stick frying pan with lid, till you find a good grill!
