I love these frozen egg noodles from Reames so much because they are thick and chewy and oh so satisfying! This Instant Pot chicken and noodles dish is the ultimate in comfort food and will become a permanent recipe in my cooking rotation. YUM!

Today’s Ingredients:
4 TB butter
1 medium onion, chopped
1½ lbs chicken thighs, 1” pieces
3 garlic cloves
1 tsp poultry seasoning
1 tsp salt
½ tsp black pepper
½ tsp red pepper flakes (optional)
3 cups chicken broth (1 TB Better-than-Bouillon + 3 cups water in the video)
24 oz package frozen egg noodles (Reames in the video)
2x 10.5 oz cans condensed cream of chicken soup (Campbell’s in the video)
1-2 cups frozen peas and carrots
optional garnish: fresh parsley
Instructions:
1. Heat the pot on the highest sauté setting and add the butter when the display reads “HOT.” When the butter is melted, add the onions and cook for about 5 minutes until translucent, stirring once or twice.
2. Add the chicken, garlic, poultry seasoning, salt, black pepper, and (optional) red pepper flakes and cook, stirring once or twice, until the meat is no longer pink on the outside. This should take about 5 minutes.
3. Add the chicken broth and stir to combine. Make sure to deglaze the bottom of the pot during this step - scrape up any stuck-on browned bits to avoid a “BURN” warning later. No more stirring after this step.
4. Layer the frozen egg noodles over the top as evenly as possible without stirring up the bottom layers. Use a spoon to press the noodles into the liquid, but do not stir. It’s okay if the noodles are not fully submerged.
5. Layer the cream of chicken soup over the top and spread as evenly as possible, again without stirring up the bottom.
6. Lock and seal the lid and cook on high for 6 minutes followed by a 10 minute natural pressure release. Then release any remaining pressure and reopen the pot.
7. Stir to separate the noodles and make the sauce smooth. Taste test and adjust seasoning to your liking. Now stir in the frozen veggies and cover for about 10 minutes to heat through and thicken.
8. ENJOY!

I like the simplicity of your recipes. No fancy ingredients. Simple, one pot recipes that anyone can pull off. Presentation is top notch. Camera angle, speeding up video are all great. Too many chefs on RU-vid focus on themselves as much as the recipe.

@@NosieBee I look forward to those. I believe an average viewer is like me. We have no special cooking talent. We need quick, simple, precise but forgiving, healthy, easy to understand and easy to execute recipes so that we aren't relying on unhealthy fast food or frozen food. Professional chefs don't interest me. Too many fancy ingredients. Too much process. Feels like watching a fancy show than practical instructions.

Another great recipe! Short, sweet and looks delicious 🤤. I love those frozen egg noodles although they are becoming harder to find in my upstate New York stores🤷🏻‍♂️ I do have a stash in my freezer so I will have to give this recipe a try, thanks for a great comfort food meal 👏🏼
