Hey Jason!! Just a little tip for you, instead of using chopped/diced onions, try grating the onions on a box grater or perhaps use a little mini food chopper/processor to make the onions mush. Works great, please give it a try and let me know how you like it!!!

Hi Jay. That sauce looks amazing, and the meatballs are making me hungry! Why don't you also brown the meatballs at the beginning to seal in the flavour, then use the meaty oil to saute the onions and get enough more flavour? It is a fab dish in any case, and I will certainly be making in when my Instant Pot arrives (any day now!)

If you bake your meatball in the oven using a grill in a pan. It will drain the grease away from the meatballs and then add them to your sauce in the pressure cooker... It comes out great...

Jay, these look delicious! I am new to pressure cooking and trying to get the hang of it. I have a question regarding this recipe. Once you pull the meatballs out of the sauce could you then add pasta to the sauce and bring back up to pressure in order to make spaghetti & meatballs? Or would you need to add more liquid?
+JenniferLong2 Hey Jennifer! Welcome to awesome world of pressure cooking : ) Great question, I have never pressure cooked the pasta its self in the sauce, with or without the meatballs. Usually while the meatballs and sauce are cooking up I just put on a pot of water and make my pasta stove top 12-15 min. BUT you can always make the pasta in the pressure cooker first, add water (salt is optional) and put your pasta in, pressure cook for about 8-10 min, vent and ensure the pasta is done. Now - I am always about experimentation. Sometime things come out Great or I can find myself saying " What were you thinking" You can definitely try your method/suggestion, and YES pull meatballs out and YES I would add another cup of water, because water is what creates pressure; and that's pressure cooking. You can always later reduce your tomato sauce, removing the water contents to thicken it up, or just have it as is. OK - lol - I hope this helps and that I didn't confuse you further. Your video is great and the recipe looks fantastic. I wonder what the purpose of the sugar is? Is there some reason it has to be there for incorporation? Or can I forgo sugar? I've never put it in any of my pasta sauces, but I'm new to pressure cooking?
Once you remove the extra fat, you could probably chill it to solidify it, and remove it, and add the small bit of sauce back if you have anything left after eating.
Thx great recipe - I have done it 3x now worked great however the last two tune can't get sealing pin to rise up and seal up prior to countdown timer had to try many times to get it working even checking gasket to make sure in place and adding water upto 2 cups making mine come out watery. Like I said before I can get it to seal countdown timer starts - do you think something is wrong with my instant pot? Figured I'd ask the guru - thx again for the great recipes I'm a subscriber.. Hello my friend!!!! I'm so glad to you've tried the meatballs. After Beginning to read the first sentence I was going to suggest that it would be that you needed at least one cup of water to building the pressure, but you have done that. I've seen the same thing before, because it's happened to me when making sauce and then after I add a cup of water it works like a charm (That's why said to do it in the video). Is sauce the only problem Recipe when building pressure??? I wonder if it's because it's thick, (You may consider not packing the pressure cooker too tight and then give that a shot; but nevertheless if you added 2 cups of water and it still happening that kind of is a mystery. Just to let you know if your sauce is watery you can always put the pressure cooker on sauté and continue to stir and reduce your sauce while the sauce thickens up and the water content is removed. +Taylor Shunk Hi Taylor : ) Great Question! Yes it is absolutely possible to take advantage of this recipe with out an Instant Pot (but I recommend you get one : ) Make the meatballs as shown. When making that Sweet Basil Tomato Sauce, on Stove top I would use a medium flame and in a large pot use the same order of ingredients as the recipe outlines as shown in the video, bring to a rolling boil and allow to simmer for 5- 10 min. Add the meatballs and on a medium low flame allow to simmer together for 30-45 min - Test the meatballs to ensure they are fully cooked. When done remove the meatballs to a side plate. Skim excess oils on top. NOW give the pot of sauce a BIG STIR~~! make sure you scrape the bottom of the pot and bring all of the flavors up to the top and stir to incorporate all of the flavors. To Maximize your Deliciousness, Allow that pot of sauce to simmer and reduce, keep stirring until that pot of sauce thickens up a bit (20 min). Hope that helps to answer your question. I like to brown my meatballs and then simmer them in the gravy for an hour, three hours for the sausages. So if I brown my meatballs first would I pressure cook them in the gravy for maybe 10 minutes? How long for browned Italian sausages? Finding a pressure cooker technique for this would be a real time saver! 3 hours down to 25 minuets!
Love your excitement of cooking a beautiful sauce, please cook the meatballs first, the onions need to be minced, do not add cheese to sauce before cooking it and PLEASE stay away from adding sugar to your sauce! other wise I really enjoyed your video!
You originally made 20 meatballs, Jay. That's right, twenty. When you remove them from the pressure cooker there are only 17! What happened to the other three?!? Huh Jay? Huh?!? Where did they go? Did the Instant Pot "eat" them? I was going to get an Instant Pot till I saw this. But I don't know now because food disappears in it.
