As a waitress I can tell you we don't want to get them in trouble but we do. When we make a mistake we get yelled at by management, the back of the house and the customers. When they make a mistake only the employees know. If the management or back of the house aren't doing their job I get in trouble and risk a sucky tip or no tip at all. Oh I drop your plate? That makes sense that I get no tip. Oh the steak isn't cooked all the way and the food is nasty? I still get no tip even though I just deliver the food.

Most of the time it seems like the waiters want to help the place the most and you can only do that by being honest. Also, it's a bit logical. Most off the times the owners/chefs are delusional/narcistic/defensive, cause all the critics are towards them, while the waiters are like victims of the bad doings. They won't be told off, they don't have anything to protect (cause usually the service is fine), so they can just be honest and try to help.
