Alice and William tried surströmming this summer. Very, very brave. But their reaction was not quite as positive as Jamie Oliver's reaction ;-)
Sour herring / soured herring seems to some like rotten herring, and to some like a true delicacy.

Please understand that all the films where people open a can and eat fish like dogs is completely wrong way to eat this delicacy. You should make a sandwich with potatoes, onions, a few small pieces of herring (because they are very strong flavor) and tomato slices, and if you want to balance the flavor a bit, you can also have the Keso or sour cream on the sandwich. The bread must be unleavened bread, often baked in a stone oven. Now, if you do this correctly, it is a fantastic dish and does not taste like it smells, and often those who once tried it do it several times again. If you get a chance, and find yourselves in Northern Sweden, try to be with a real sour herring party with people around you who can help you get it right ... :)

I have never eaten that. But I find it a little bit nonsense when people don't eat it the proper way. It is like giving a guy a plate of pure mayonnaise so he eat it without anything else... Or one pound of pure butter... Nobody does it and nobody eats surstromming just by itself

As someone who doesn't know anything about this, I can safely say that the correct way to eat this is by putting surströmming in a blender and eat it pure like yoghurt. With a tablespoon.

Think about the relation between mild cheese and a really heavy French cheese. Both are superb in their own context. You have wine with the French power cheeses. That is the relation between a sardine and surströmming. You have snaps-vodka with surströmming. And all of the above are wonderful experiences.

Well i Love this "dish", when eaten properly its just delicious, and dont forget the "nubbe", maybe a "Skåne Akvavit" or similar.... cant wait until August 3rd for the premier, maybe next weekend i´ll have some or seven of these on some bread....

I have whole fish, on top of rye bread butter potato and raw onion, and it works super when chased by vodka. The beauty is that the total taste sensation that makes you happily eat onions as if they were apples. Onions, mild and refreshing (!), go well with vodka and more sour herring. Surströmming is the Viking equivalent. Really quite a trip. No mercy ;-)

Well a friend is married to a Girl from Thailand and he was joking with her and served her surströmming and when she tasted it she was complaining it was not enough chilli and our jaws dropped to the floor when she started to load fresh chilli the small ones they are strong enough to kill a bull lol and then she clean the plate and asked for more they have a similar thing in Thailand think they call it pallaa she is a local hero here now . :-)

Or not. Some of the Swedes are actually eating this 1 time a year. It only tastes salt. When you mix it with potatoes, some thin bread, red onion. It's actually pretty nice! A nice tradition! And yes. I'm a Swedish guy!

Thanks Sir Oliver fore a great presentation. Its thrue less younger Sweds are afraid and awoid it bu the Surstroming Akademi have enormles succes abrod and made it very expensiv delicates in Sweden, so plese liste to the experts howe to eat it

lol..... that's truly amazing, I guess the chilli masked the taste of the fish. I do love chilli but not too much, was it the scotch bonnet chillies I know they are very hot but when you cook them in a soup it does give a nice hint of hotness. I know asians love their chilli. I think I might do well in the south of Sweden since I'm to move there next year you mentioned crabs and I'm a sucker for shell fish, not so much my boyfriend since his allergic to fish.

Das erinnert an deutsche Heringsfilets mit Sahnesoße und Dill auf Pellkartoffel. Der Fisch ist aber nicht vergammelt sondern wird in essig eingelegt. Ein sehr beliebtes Essen in Deutschland.

Surstrømming smells really bad, but tastes quite mild. In my opinion the Norwegian rakfisk, fermented trout is way better and has much more interesting (powerful) taste. But trout is a far better fish to begin with than herring.

remember when i grow up in a family with northern swedish ties, i HATED it, sat with a tissue in my borh nostrils and ate something else, but from when i was 15 and tried it, it really was awesome, it's a real delicassy

im swedish and im 24 years old and have never tested surströmming and will never do it! i have relatives up north that have surströmmings parties etc but man i cant take the smell so i just sit and drink som beer 2 blocks away.

Yes, exactly. Most people in Sweden don´t really eat this anymore, especially not young people. This is a dying tradition, because before when people ate this proper, they had whole fishes and also ate the fermented roe. Myself, I can eat it like they do it here and yeah its good but not that special, the taste is not as strange as the smell, and if you eat it indoors you will never ever do that mistake again. :) Swedish food of today is just the normal international cousine with a local twist.

+Son of Persia Well i dont know about the cheese. But this is a fish that is left in barrels and salted then fermented for few months before it´s being sold to wholesale stores. Just the fermentation with the salt produces this classic "rotten-egg" smell which most people cant stand, then add fish and a few months to that. But with the proper serving and handling, this is actually very delicious!

Uhm... normally you open the can in a bucket of water outside, that would take away most of the smell. After you opened it you clean the fillet, or if its the whole fish you have reins it aswell. Then you take a "Tunnbröd"(Thin-bread, swedish bread that's quit thin), spread some butter on it, after that pieces of cooked, but cold, potatoes and smaller pieces of the fish-fillets, chopped onions, sour-cream, some people also puts chives or "dill"(don't know "dill" in English, sorry), and you ether eat it as an open sandwich or you use a larger piece of that swedish thin-bread, and roll it up. Surströmming is not rotten herring, but it is fermented herring, and it's only a custom to eat it in a period of each year, and is only done by people living or comes from, the eastern cost of the northern half of Sweden, and they also treat it as a delicacy. There's nearly no one else in Sweden that likes it, so it's not common in all of Sweden to eat it, and therefore it isn't typically "Swedish". What is more commonly, and close to surströmming(but is not fermented), instead is a large amount of different kinds of "Inlagd Sill"(Pickled Herring (Sill/Strömming=Herring)).

As a swede I've tried surströmming, and trust me, the smell is outworldish. However, it tastes rather good, however I must admit that I gaged several times on the taste as well, since it is really aggressive as well.

its not really a swedish thing its tradition from the middle of sweden up north the coast region and there is where they make the fermented surströmming and then southern part is more of catching crabs in the lakes and cooking them with lots of dill and other ingredients every family has its own secret recipe. the only thing that everybody do is drinking lots of vodka so those who don't like the fish or crab they drink surströmming or crab :-)

Actually, it doesn't taste so bad... sure, the smell is horrible. I heard of an immigrant in Stockholm a while ago... he was new in Sweden (don't know where he came from, though not European)... once, he could smell surströmming, and thought someone had died. He called the police, panicking and told them someone had died... when the first patrol arrived, they cancelled the alarm, and explained that someone was eating food (surströmming)... Poor guy :D

I lived in Finland for 4 years and had to eat this stuff to be polite. No one really likes it but I always ate 2 to be polite. My dog refused to try.

Haggis is lovely. Sushi is wonderful. Kippers are fine. Calf fries I don't know but this is actually like being hit in the face with a - long since dead - corpse. I mean it. I still ate it though, I try everything. But it's... horrible, like someone pouring sour vomit down your throat.

Sure we can respect it's Swedish tradition, but then again it was only preserved like that from the beginning, when the right stuff couldn't be found. So now why not preserve it a little more better, so it does not stink? Canned fish are everywhere in North Europe, the ones in Russia are preserved in some kind of oil, and it smells oily and fishy

In my youth my grandmother opened a can of surstroming at a family dinner. I was sitting in a chair closest to her, when she pierced the can is sprayed a vile liquid directly into my left eye. I was blinded permanently, the doctors told us they have never seen such an aggressive substance. Please be careful.

Most of that story is true except the part where it was actually not a joke. We were having a problem with salt back then. There was not enough to keep the fish fresh. So they sanctioned the salt. And then what you said happend. ^^

The smell is like a classic stink bomb, like rotten eggs intensively! But a superb dish if you can handle the stench of rotten corpses. Just superb :) (I'm Swedish and haven't befriended with it yet but, have had a taste though...)
