Ingredients
Choux Pastry
1. Butter (salty) 35 grams
2. 80 grams of water
3. 1/8 teaspoon salt
4. Special wheat flour (Red Lotus) 55 grams
5. 2 eggs (NO.3)
** If using egg no.0 or 1, use around 1 and half eggs. Or 95 grams **
Custard cream
1. 1 egg yolk
2. 45 grams granulated sugar
3. 1 teaspoon milk powder (optional but it help for aroma)
4. 130 grams of fresh milk
5. 30 grams whipping cream (the custard mixture)
6. 10 grams of wheat flour (all purpose flour / cake flour / special flour are optional)
7. 200 grams of whipping cream
8. Vanilla flavored 1/2 teaspoon
