Japanese style pasta is a very common genre of food in Japan, and for good reason! Full disclosure: this dish is a copy cat! My attempt to recreate a dish I fell in love with at a local Japanese pasta restaurant here in Vancouver. It's a light cream sauce flavoured with "masago" or the little orange fish roe you sometimes see on sushi! It has all the iconic flavours of Japanese cuisine: a balance of sweet, salty and umami. The masago and bonito give flavours reminiscent of the ocean. Top it with a fried egg and seaweed, and I'm a happy gal! Oh, did I mention it is insanely easy??

About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the RU-vid channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via RU-vid videos, her cookbook, and cooking classes. I love that you use a spoon to eat noodles. When I was in Thailand it was strongly impressed upon me that I was not to put a fork in my mouth. At Thai restaurants in the US every place setting has a fork and often a knife but rarely a spoon. Although I haven't been to Thailand in over 15 years I always feel awkward eating Thai food with a fork.

2:46 I was told that crimini mushrooms were 'baby portobello', some times sold under that name. I never heard about button mushrooms being a younger crimini mushroom. So I looked it up, and I learn that the three of them are the same variety of mushrooms in different stages of growth ('ripeness'). Basically, the white button mushroom is the younger version that has not been exposed to sunlight. Criminis are a bit older and they have been exposed to sunlight and turn brown. Portobellos are the older version.. basically they have been let to grow and exposed to sunlight for a longer time to develop more flavor. Thanks for this video, I learn something new today! and I would also reccomend possibly adding some furikake. I feel like that combination of the shiso (or anisy herb of your choice) and nori would be amped up with the lovely roasted flavor of sesame seeds. again I havd never made this, but just a possible suggestion...

I had a dish similar to this when I was in Vancouver but instead of spaghetti it was udon and I think there was uni in the sauce to! I've been dreaming about it ever since.

I had a similar dish to this when I was in Shanghai. The sauce was pretty much the same but instead of asparagus there was scallops and the pasta was topped with some thin slices of smoked salmon. It really played to the seafood lover in me.

Just as a hot tip, if you didn't know; the bottle you have is not actually mirin. Kotteri mirin is a seasoning meant to mimic the taste of mirin, but I'd be willing to bet the first ingredient is corn syrup or something. The main ingredient in real mirin (hon mirin) should be fermented rice koji. Otherwise you might as well just add sugar.

Yes I know it's not real mirin. Real mirin apparently has too high of an alcohol percentage and cannot be sold in Canadian grocery stores. At least I think that's what I was told at some point..

Not sure if this was already pointed out, but this recipe is derived from the italian inspired japanese dish Mentaiko, but uses a different roe as substituent. For anyone who wanted to know the name

Aloha Pai, just an FYI: Kewpie is short for Cupid, that's Cupid on the label. As you stated masago is capelin eggs, and tobiko is flyingfish eggs. Tobiko is rarely used for this dish because it's over double the cost of masago BUT if it can be used to similar effect.

Curry House in L.A. has a sea food pasta that looks like just pasta with flavor and I could never figure out how they made it. Now I'll try your recipe and top with Shrimp, Mussels and Scallops..

I tried this with fresh shitake mushrooms (I took the stems and added them into my dashi stock as well), more mayo, and buckwheat soba noodles and a sou vide egg and OH MY GAWWD...

this is amazing! can you please also do a Japanese carbonara recipe and also sea urchin pasta (joel robuchon in hk does an amazing one and i always wanted to know how to do it)

I wish you'd make more pasta dishes with Thai sauce. I've tried making pasta with Thai curry sauce several times but it never turned out very well.

shiso has a very anisy flavor so if you cant find shiso leaf my peeps, try some basil (maybe even Thai basil 😉) or maybe some fennel seeds? idk I'm just guessing, not sure if that'll actually work well with this dish.

I do if the dashi is a main ingredient like if I were to make miso soup, but for this, with so many other flavours, this simple one works just fine.

You can still add nori julienne and egg if you like or adapt it to your taste with even more fleshy types of mushrooms in the pasta
