Japanese Omelet ( Tamagoyaki ) Recipe
1. [ Preparation of eggs ]
Crack eggs into a container and mix well / 24 eggs (eggs US size Medium / Japanese size MS)
Rub the egg
2. [ Seasoning ]
Water 450cc
Shirodashi 38g
Sesame oil 13g
Noodle soup base (Mentsuyu) 50g
75 g of brown sugar
3. [ Mix 1 and 2 ]
4. [ Bake ]
Cooking sheet on tray / Tray size 28cm × 28cm × 4.5cm
Put 3 in the tray
Remove bubbles with a burner
Aluminum lid
Put the tray in the oven
Bake at a temperature of 150°c and a time of 1 hour 15 minutes
5. [ Remove from oven ]
Remove from mold
To cut
Transfer to storage container
Keep fresh in the fridge for 2 weeks

Noodle soup base is a bonito-based seasoning that is often used in Japan called "mentsuyu". In this recipe , this noodle soup is added as a secret ingredient, so you can make it delicious without adding it.

What kind of baking pan is this? The removable tray looks useful

This tray is not a baking pan. I am using a stainless steel tray. The reason I use this tray is that I can shape the omelet to my liking. However, you can make it with any shape of tray. I'm sorry if the answer is different from your question. If not, please comment again.

What is the 'noodle soup base' please?

'Noodle soup base' is called 'Mentsuyu' in Japanese. This is a seasoning made from soup stock, soy sauce, mirin, and sugar. It is mainly used when making soup for soba and udon .

Sometimes my omelette is blowing up, I wonder what’s the reason? I’m adding less sugar, I don’t like it that sweet.

Perhaps it's due to overcooking or a high oven temperature. The trick to baking well is to bake slowly and at a low temperature, so give it a try.
