You can tell that this fish has a swampy flavor both by its color and the fact that he was so careful to remove every Speck of its skin the oil of the fish is probably very potent not to mention that he didn't use his deep fat fryer because he didn't want to contaminate the rest of the oil and instead opted to use a small batch on his stove so he could throw it out afterwards LOL it's probably an acquired taste and he didn't want future dishes to all taste like batfish also he paired the dishes with strong flavors like homemade pickles and tartar sauce all of this leads me to believe that the fish doesn't taste very good it's probably one of those flavors that you either love or hate but there is no in between
i learned, later in life, there is no need to scale, gut, etc, as you see here, just get the meat so you keep it whole, cut the filets off of each side, then, as you see at about 10:55 … just slide it off the skin. boom, done. 😊
Don't try to be an expert when you cut the fish out and cut all of its meat to fix your cuts, it's hard to understand what the chef is trying to do from a 2-kg fish and a 500-pound plate
I love your videos but I would love to see you actually eating what you have made. Gives us a sense of what it would taste like to the person watching. Please consider doing that.

Scales can dull the hell out of a blade if you leave them on the fish that and it's way more difficult to fillet as well it's much easier this way just thought I'd let you know in case you were still wondering after 7 months LOL
Earl Kyat oh ok. I’m from Midwest of the United States. I’m not close to any ocean or big lake. So most of the proteins I eat are from beef and chicken. So I’m not used to fish. To be honest I’ve fished and caught bass and other fish, but from growing up on beef and chicken, I never learned how to cook fish and make it taste good.
this is really a work of art.....real artisan dish. I would definitely pay a 50+ bucks for this kind of meal instead of some overpriced american burger shit
