Hyoung Kim I love the fact that idiots forget how water works. Y'know, evaporation, condensation...Japan is surrounded by water, they get plenty of precipitation. Water is not an issue for them because it literally falls from the sky.

A big reason for using so much water is to prevent food poisoning. Think about it. If they didn't keep a constant flow of water going, all sorts of pathogenic bacteria and viruses would quickly accumulate on the cooking surface and multiply. At home people don't have to worry about it, because they cook a couple of servings and they're done. If they didn't use the flowing water, every few times they made a dish they'd have to thoroughly clean everything, before they could go on. That's because the food is fresh, often alive just before cooking.

Thank You for telling where you got it and what the name of the dish is. A lot of Street Food Videos don't even tell you what the name of the food they are showing is called most of the time and Never tell where or what part of the city they are in where they found it.

Go for the ramen or bento boxes. It's the most filling and priced cheaper. Generally sushi can be pricey for the portions

Adam Italia Yeah, it's on the decline but that doesn't mean their current population is low though. It's not low by any standard, especially when you take into account what little land they have. The future's population of Japan might be low (in terms of land-to-people ratio) but it will take at least half a century for that to happen since the average Japanese life expectancy is 85 now.

That is a garden hose hooked from the sink to a spigot on the wall providing the sink with running water. the entire kitchen is mobile and can be moved from place to place.

Dude, water makes cycles in nature. You can't waste a water unless you pollute it. These guys are not polluting a water, it will return to a river/ocean and evaporate, just like if it would do without humans using this water. Contaiminating a water with deadly chemicals is a waste of water and you don't even need to use water to do this - just throw garbage to the river.

For me, this was the best stand for fresh scallops. I ate them for breakfast the three mornings I was in Osaka. Can’t beat King Crab and Scallops for breakfast. I would have preferred if they did not add pepper but from my understanding, that is how they do it in Osaka. (I had just gotten used to how they prepared them in Hokkaido.)

This is Osaka Japan though where cost of living is one of the highest in the world being in one of the largest and most modernized cities with deep rooted history in the world. The difference between Indonesian and Japanese prices is worlds apart.

Eraser On one hand, yes, they just cooked fresh (expensive) large scallop...but on the other hand, imagine if you were working on whatever your trade is and have someone just shit all over your livelihood because you just did labor for construction on something they could've done themselves given enough time, or you just served a table walking back and forth bringing food and drinks, etc, or you typed work as a secretary that your boss could've done himself given enough time.... We pay for time, my friend, because if we had a million years to live then we could learn to do it all ourselves, too, and do it for ourselves. This is coming from me, a capitalist and business owner...I pay employees a decent wage for their time because I can't do it all myself even though I know how.
