Jamaican here, I definitely approve (although if you guys want to get pigeon peas for your rice and peas, try to find a Caribbean grocery store if you live in an area that has plenty of West Indians).

don't know about other places but here in west FL pigeon peas can be found at pretty much every grocery store, so can scotch bonnets

Largely depends on region. In Australia it's very very hard to find Scotch Bonnets but habaneros are abundant

They're the same pepper, unless you know you're getting jamaican bonnets or mexican habaneros. Any flavor differences to note come from soil and water differences not the peppers themselves.

This wasn’t bad. I’ve never used soy sauce, we normally used browning. Also, Callaloo would have made the plate more authentic. Folks should probably know that the scotch bonnet in the rice is not allowed to burst, it’s just for the flavor- take it out before serving.

In Jamaica there are many individuals of Chinese descent so I can see where recipe #2 comes from. Combining both recipies - as you have - results in the more common flavor profile you will find. I would suggest giving that rice and peas another try - I'm not Jamaican but it looks a bit friendly.

This looks pretty darn close to what I had in Jamaica the only thing I could say is missing would be that the cooks basted the chicken with clarified butter while it was grilling and they served the cornmeal fried dough as a side. That's a meal I won't forget for the rest of my life. I was starving after a day of horseback riding and almost getting drowned in the ocean by said horse. A couple Red Stripes make it perfection.

Jamaican here, you did pretty well. One main thing to improve on would be the colour of the rice but that's because you used canned peas and the redder colour would come from the fresh ones. But again, overall you did well and I can see you did your research as always to get it as accurate as possible.

My man, pigeon peas aren't hard to find. You can often find them named gandules and you can find them in most "Hispanic" shops or areas of supermarkets.

Goya sells Pigeon Peas, should be easy to find in NY. Go to a bodega or the “international” aisle in any big grocery.

The plantains weren’t done traditionally. I’m begging you to try and wait until they’re sweet! The sugar carmelizes and it’s a totally different experience. Also the rice was very wet it’s traditionally not. He did a great job on the chicken but the others not so much most videos banish is killing it so I will not act like I just don’t like him as a Jamaican I’m just saying what the food back home is more like.

easily peel the plantains by cutting off the ends and slit sides lengthwise along the ribs. Cover with water in a microwave-safe bowl. Nuke on high for three minutes. Allow to cool and peel.

So! Those were tostones fried plantain is usually ripe 😊 We eat green plantain fried (and not smashed) but fried ripe plantains (also no smashed) is what you’d typically see as an accompaniment with most of our meals. Very impressed that you a similar result.

If you wanna color the traditional mix even better, you can use stuff called browning. It adds alot of color and it doesn't overpower the flavor.

Hey Babish, could you make the cuisine in "Welcome to the Sticks"? The only food I've seen there is a "smelly cow cheese", must be delicious just by the smell, but then there's also something called "gu-gu" I think, which may just be big potato chips and that's it, I can't seem to find out what it really is.

Fun fact about flattening plantains- You can actually flatten them with the plantain skin you peeled off. Just pretty much sandwich the plantain in between and flatten up. 👍🏻

I was just commenting about that version of frying plantains just yesterday on another video from a different channel. The fry/smash/fry version is top notch. A Cuban immigrant taught me at the Dorothy Day house we used to volunteer at. He also taught me the boiling the can of sweetened condensed milk to make dulce de leche. Just always make sure the can is covered with water, or it could explode, which almost happened to me the one time I tried it at my house.

Loving this recipe! Reminds me of when i went to Jamaica as a kid. I just wanted to say about the Pigeon Peas: you can actually find those in the Hispanic Foods aisle of your local supermarket. They're under the Goya brand, and are mostly known by their spanish name: Guandules. Hope this helps!

The founder of Traeger now works for Pit Boss designing smokers for them. I've had one since February and love it, you get more cooking space for the money with more features and the metal is thicker so it holds temps better. went with the Austin XL

I so wish that all the critics would go start their own cooking channel and subject themselves to the armchair chefs, who have nothing better to do than criticize others. Every cooking channel I watch, there is always people griping about something- people, life is hard enough, quit being so dang negative. Every person is unique and individual and their interpretation of a traditional recipe might be a bit different- live, love, experiment and broaden your horizons! So this is amazing!! The Jamaican in me was ready to see what you would do with this lol the only thing I probably wouldve changed is the plantain you used, we tend use those green ones in our soups and fry the sweet yellow softer ones with our other dishes. Otherwise really not too bad for a recipe 😊

We use small green banana in our broths, and I like to boil ripe plantain. I not a fan of green plantain, too starchy. Super sweet fry plantain with brown sugar and cinnamon thooo! Yum!

@@MichaelAlthauser Just to add onto this, I actually assemble, sell, and deliver Traegers for a living. They're nice, but not worth the price imo. Also, don't buy the "special" or "limited" versions in roadshows or from costco, they're inferior versions. Pitboss is a solid "cheap" version. DO NOT BUY GREEN MOUNTAIN GRILLS.

In place of soy sauce, I use a mixture of fermented black soybeans and black garlic. You can use less so it doesn't overpower the flavor, plus they both lend a lot of complexity that soy sauce alone simply doesn't have. And it gives you that same dark brown color. More allspice will also give you a better color. I've always used a 2:1 ratio (by volume) of whole allspice berries to fresh thyme leaves. I also char the onion and peppers before adding them, which helps with color and flavor.

Just make sure you start that traeger (or any pellet smoker) with the top open until you get a bright flame or else there’s a risk of fumes from the pre fueled pellets exploding. Excited to make this recipe on my Pit Boss!

Babish is using 6 scotch bonnet peppers! I'm from the Trinidad 🇹🇹 so we eat scorpion pepper here... but even I would never throw that many scotch bonnets in! Either he can really handle spice, or those are terribly weak! The fact that he smelled the mixture and didn't comment on the smell says something though 😅

Hey @babbish, I recommend cooking all poultry to. Minimum of 160f and then letting rest for 10 min for a carryover to 165f. This ensures a completely salmonella free experience according to USDA standard. It's also what the French refer to "au point" pronounced as "au pwah" or on point in English. Ensuring optimum juiciestness but also no jungle worms that may cause gastrointestinal distress.

Puertorrican here. The smashed plantain is called Tostones over here, and they are traditional served alongside rice dishes and universally in carribbean dishes. Mostly alongside pernil and arroz con gandules.
