As you may have gathered from the title - I'm a tad obsessed with this dish. Jianbing is one of the first foods I ever fell in love with in China, and to this day it's one of my favourite things to grab for breakfast. Big shout out to Jess for teaching me this simple, life changing, do-it-at-home recipe for Jianbing!!!! Full recipe below:
-----------------------------------------------------------------------
JIANBING RECIPE (serves 2)
Step 1: Make crispy texture
- deep fry either 1) spring roll wrappers 2) wonton wrappers, or 3) store bought youtiao
Step 2: Make sauce (double this recipe if you like saucy things)
- 1 tablespoon Tian Mian Jiang 甜面酱 (Sweet Bean Sauce)
- 1 teaspoon Sriracha
- 1 teaspoon Dou Ban Jiang 豆瓣酱 (Chilli Bean Sauce)
- 1 teaspoon sesame oil
- 1 piece of fermented bean curd 'Fu Ru' 腐乳
Step 3: make pancake batter (this amount will make you 2 decent sized jianbing)
- 40g green bean flour 绿豆粉
- 10g plain flour
- 100mL water
Step 4: prepare any toppings
- cut up spring onion, cilantro, crush some peanuts, anything you'd like to add as a topping.
- make sure you have some eggs in the fridge to use in the pancake!
Step 4: put it all together!
-----------------------------------------------------------------------

Yeap, Amy's doing it very good. I'm sure that the girl in that shop is not very good at making Jianbing actually. The pancake is over-fried so that humidity inside is not enough. You need that humidity to make the crispy slide taste softer. And, the most important thing, is you need enough vegetable in it to fill it and to balance the taste. But in that shop, the vegetable is not given enough.

Jess did a great job making the home version Jianbing! But just a little suggestion here, you could put the green onion and cilantro on the top of the egg side(when the egg is not well done yet, and before flipping over). So once you flip the egg side, the pan can better heat the green onion and cilantro and that unique aroma of those two ingredients will better get out and make the Jianbing more flavorful~ And Jianbing will also look more colorful~

I first had it on an autumn day in wudaokou, Beijing, 2006.....it costs me RMB2 back then. My God, once I had it, I keep eating it non-stop, for breakfast, mid breakfast and pre-lunch. I can continue eating it if not for it being sold out by lunch time. I have been hunting for the best jianbing ever since and my personal fav is those from Shandong province

the place i get mine when i visit Changzhou, they are only on the street between 6:30am to 10:30am, and they add these cut up spam-like sausages(mystery meat) in with the flat crispy, and they do it Shandong style where the egg side is inside. they also have a great hot sauce that goes so well with the sweet bean sauce(tianmianjiang). not too shabby for 3.5 RMB. +1 RMB for an extra fried egg with runny yolk folded in. btw, if you and your family ever visit Changzhou or Hangzhou, there's 2 Buddhist vegetarian places you must try. in Changzhou there's the Tianning temple Ruyi-suzhaiguan, and in Hangzhou it's Fuquan Chayuan next to Yongfu temple(down another road from Lingyin temple). both have very different styles of Buddhist vegetarian cuisine. Tianning temple one has more guest-worthy dishes so there's a lot of vegetarian shrimp(i think it's konjac?), vegetarian crispy taro duck(crispy tofu), vegetarian abalone(made with a kind of mushroom), etc... and the Yongfu temple one is more rustic and minimalistic, but i'm not sure if they need a reservation.

R Y haha. They are quite similar. I’ve noticed subtle differences like the crunchy wonton in the one mostly in Beijing vs the fried dough in Tianjin. Also the pancake can be quite different. The one in Tianjin can be found with almost a nutty flavor. I hadn’t tried that in Beijing.

@YMa-ml5dx
@YMa-ml5dx 3 года назад
Great video as always! BTW, I think the main difference between the Shandong ver. and the Tianjin ver. is the batter as the word Jianbing actually refers to the thin pancake itself, so additional receipt differences like the egg part is not a determining factor. As I understand it the Shandong ver. batter uses more corn flour, green bean flour, and sweet potato flour while the Tianjin ver. uses more wheat flour. The different characteristic of the flour means different amount of water is required to make the batter, this actually explains why the Shandong ver. is more chewy and crispy, and also why the Shandong batter is traditionally much more sticky than the Tianjin ver.

The name is sá “糁“。Originally a Muslim specialty but loved by all Linyi Locals. Whenever my cousin and I visit our home town we wake up super early to visit the 糁 shop next to my old primary school. And the traditional way we eat it is put many kinds of ingredients in it. Like vegetables, egg or sausage(you can choose whatever you like). And Shandong jianbing is normally made by millet which is yellow and the traditional way to eat it is rolling it with green onions and bean paste.
