Joe is so tricky. He’ll ask you a question and then question your answer. Make you doubt everything. If you scale back your answer he says you have no confidence. If you scale up your answer, he’ll call you too cocky. If you double down he’ll just stare at you and say “really?” But in the end you don’t actually know if he ever agreed with you. I could handle Gordon yelling insults at me, or Alvin making fun of me, but joe? The amount of disappointed distant father energy he lets off is terrifying.

Joe isn't tricky. He's just always confused about his critique and unqualified to be a judge. He's a restauranteur, not a professional chef. Also, if your dish is not from Italian cuisine (i.e. Indian, Mexican, ect); he will hate it. Useless prick doesn't deserve to be a judge.

Issue with Joe's criticism is, as a winemaker and an Italian, he judges dishes by being the one challenge every chef has faced; a food critic. Food critics will look for the flaw, be it an extra grain of salt or even half a second overcooking. They will find a flaw, and they will use it to tear you apart.

People hate Joe but I absolutely love his “character.” I’ve been watching Masterchef since I was a kid and my whole family loved his unnecessary menacing and antagonistic character/mannerisms. Just to make this clear definitely: in Italy we don’t use loads of garlic. We usually fry a slice of it in olive oil just to add the flavour, to then throw it in the garbage. We actually prefer to eat onions, but once again, just the right amount in order to catch the right taste of it, no more no less.
