Making water vinegar mixture:
Ingredients:
Water - almost 1 cup
White vinegar - 2 tbsp
Method:
1. Combine both water and white vinegar well and keep this aside.
2. Water vinegar mixture is ready.
Making chhena / chena:
Ingredients:
Fresh milk - 1 ½ cups
Water vinegar mixture - kept aside earlier
Making kalakand:
Ingredients:
Chhena / chena - made earlier
Milk - ½ cup
Pistachios (finely chopped) - for garnish
Making chhena / chena:
Method:
1. Bring 1 ½ cups of milk to boil in a pan stirring occasionally.
2. Once it boils, turn off the flame.
3. Add the water vinegar mixture kept aside earlier little by little.
4. Stir well.
5. Add little more of the water vinegar mixture.
6. Chhena / Chena is ready.
7. Position a strainer over a bowl and place a cloth on top of the stainer.
8. Transfer the chhena / chena.
9. Do not throw away the whey, use it to make chapatis.
10. Wash the chhena / chena with normal water about 2 to 3 times.
11. Squeeze off excess water.
12. Mash the chhena / chena well.
Making kalakand:
Method:
1. Keep ½ cup of milk in a pan and bring this to boil.
2. Turn off the gas when the milk reaches half of its original quantity.
3. I have transferred the milk to another bigger pan in this video.
4. Add little less than ½ cup of sugar to this.
5. Mix well.
6. Turn off the flame and add the chhena/ chena.
7. Mix well.
8. Keep pan on medium high flame.
9. Keep stirring consistently to avoid any lumps or sticking to the pan.
10. Keep stirring for about 5 minutes.
11. Transfer to a container.
12. Top it off with finely chopped pistachios for garnish.
13. Place it in the refrigerator and let it set for about 6 to 7 hours.
14. After it is set for about 6 to 7 hours, cut it to desired shape and enjoy.
15. Enjoy this delicious kalakand with your family and friends.
