Kek Putugal (Steamed Grated Tapioca Cake with Sliced Bananas) is a long lost traditional recipe of the Peranakan community. It’s layered cake made from Tapioca paste with banana slices in between the layers. It’s a mouthwatering dessert with sweet milky taste.
Ingredients:
1500gm Grated Tapioca
300gm Grated Coconut
700ml Coconut Milk
250gm Sugar
2tbsp Salt
2tbsp Glutinous Rice Flour
8tbsp Blue Pea Juice
1 Comb of Banana (Preferably Pisang Emas or Pisang Raja)
Preparation
Grated Tapioca:
• Leave Tapioca paste into a colander over a basin to collect the residue.
• After some time, remove the juice from the basin, place it in a bowl & collect the residue (starch) at the bottom of the basin.
• Scrape the starch & place it in a bowl.
• Blend grated coconut paste till fine with the collected juice.
• Using cheesecloth, squeeze till dry.
• Mix residue into the dry tapioca paste, add in coconut milk, blended coconut paste, salt & glutinous rice flour & mix thoroughly.
• Divide pasted into 2 portions.
• Add in Blue Pea juice to one of the portion, set a side.
Bananas:
• Cut banana into long thick slices. Put a side
Preparation for Steaming
• Pour ½ of the white portion tapioca paste into the base of the steaming tray, spread evenly.
• Arrange sliced banana closely covering all surface.
• Pour the Blue tapioca portion on the surface of the arranged banana, tap gently the surface with presser.
• Arrange sliced banana closely covering all surface.
• Pour the remaining white portion tapioca on the surface of the arranged banana, tap gently the surface with presser.
• Arrange sliced banana closely covering all surface.
• Pour the Blue tapioca portion on the surface of the arranged banana, tap gently the surface with presser.
• Cover the tray with aluminium foil to prevent water dripping into it.
• Steam with high heat for 45mins. Remove & leave to cool down.
