I’ve watched a lot of cooking videos over the years, and I have to tell you what a wonderful job you do. You cut down on excess verbiage and don’t show unnecessary steps, like measuring. The background music is classy and so are you. P.S. Gonna try that ketchup! 😋
That's why I really enjoy his videos. The recipe is the star, not someone trying to establish themselves as an online chef. This guy IS good.... nothing to prove.
I tried this and used apple cider vinegar and fresh garlic. AMAZING I keep trying to think of things to cook so I can use more ketchup. Thanks for the video.
I just made this today. It came out really good. I cooked mine in Instapot for 10 minutes then, I sauteed it and let all that liquid dissipate took around 7 minutes and making sure I kept stirring every 20-30 seconds. I didn't strain it because I like all the tomatoes with the peel. I put it in my blender (vitamix) around medium NOT high. I added Apple Cider Vinega and then used Monk fruit sugar for sweetening. That came out perfect. Thank you very much for the recipe.
IF YOU DON'T HAVE HEIRLOOM TOMATOES AND YOU WANNA HALF THE AMOUNT OF KETCHUP, HERE'S THE RECIPE: 5 tomatoes 1/4 cup of white vinegar 1 tbsp salt 1/2 tbsp black pepper 1/2 tbsp garlic powder 1/2 pinch of celery seeds 1/2 of any sweetener Cook on medium not high or it will burn! It happened to me👌
Just remember, that tomatoes have about 4,5 - 11 grams of carbs, depending on type (mostly sugar/fructose) per 100 gram. That is quite a lot. And that is with the water still in them. When you cook it down like this, it becomes more... a lot more!! It is LC compared to regular ketchup for sure (and a heck of a lot more healthy), but it really isn't "keto". Not trying to be negative. Love this stuff myself. But just be aware that this is LOADED with sugars and use sparingly :-)

I was told by my doctor not to follow the keto diet because it is harmful. He said I should eat a diverse diet so I tried the Agoge diet and I'm starting noticing less stubborn belly fat really fast.
The reason your doctor said that was to keep you as a patient. If you do healthy keto (as in no processed low carb foods) then you won't even need to go to the doctor!

I just found you tonight. Already shared. Going to attempt this in my Instant Pot, using saute mode to reduce the liquid after the tomatoes are done. Excited to try. Off to find some great tomatoes tomorrow.

I would add caramelized onions (no sugar of course) real garlic (coz garlic kicks ass) Worchestershire sauce (ignore the spelling) and some sun dried tomatoes to the mix (coz of the sweet aromatic flavor) and then you are ready to go...just my two cents.
Sweet. Nice n'easy, beautifully done. Except, not raw. :) Actually, pretty easy to turn it raw if you just use the tomato flesh only (concasse). I add sun-dried tomatoes, red bell-pepper, some paprika paste (raw, too, of course) for additional depth and a couple extra spices.
You could pressure cook the tomatoes too. very fast. you could liquidise a date or two in there for sweetness. I'm just wondering if I could use apple cider vinegar for added health instead of the mineral?
If you want a ketchup that is sweeter, you can try using stevia...since it's the most keto friendly sweetner and I see no difference between sugar and stevia when it comes to taste. 🙂
Looks just like real ketchup with the shine and all! It's seems amazingly easy to make also, thanks to you. I have one question though; how long will this recipe last in your fridge as there are no preservatives in it?
Dan DiBenedetto paste would work but you’re going to have a different flavor for sure. Personally I’m not a fan of ketchup made from tomato paste. But if your into savory vs. acidic I’d say it’s a good idea. This recipe is vinegar based so you don’t have refrigerate. It will last well over a year in a refrigerator.
I'm new to cooking, would a pressure cooker work? or a vegetable steamer? .. I just can see myself running the stove on high for 5 hours. I would also think adding 1/4 of swerve would make it perfect.
I think it'd work if I use pressure cooker? Adjust the time to short to preserve some texture..? I cant wait for 3 hours on my gas stovetop 😂 also do you know how long this will stays in the fridge?
If I leave out the vinegar, will it mage a huge difference? I can't have vinegar for the first 8 weeks of my current diet. Also great video, it's the most practical one I've found.
Why do they have to load ketchup with so much sugar? It's the same with salad dressings. I've started to make my own dressing without sugar and now will attempt to make ketchup using your recipe! Thank you!
Hi! Thanks for the recipe! About how many ml of ketchup did those 10 tomatoes make? The challenge, here in Canada, is the cost of organic tomatoes. We always eat only organic tomatoes, but wondering how this cost would translate to the cost of ketcup. 10 larger, organic tomatoes will cost about $12-14. We have a pretty large family of 7, and everyone here loves ketchup, so a 1 L bottle of ketchup doesn't last too long. Just wondering, for the cost, how much ketchup (approximately) this recipe made for you. Thanks, again! :-)
You can also do almost the exact same recipe but with tomato paste instead of fresh tomatoes. I do it and it's way easier, takes me about 10 minutes. I'd also recommend a dash of Worcestershire sauce. Gives it a great umami kick!
Can you add some swerve or monk fruit to it? I don’t think that would be sweet enough for me with just vinegar to replace even half the sweetness of ketchup?
How long does it last outside? & what’s a celery powder substitute? It would be helpful if there can be a list of some substitutes. I live outside the U.S. & some things at times aren’t available. 🙏
Hmm... in 1 small whole tomato (not medium) (2-2/5" diameter) (91 g) there are 3.5 carbs, 1.1 fiber (which means net carb is 2.4 carbs), and there is also 2.4 g of natural sugar (apparently where the net carb came from)REMEMBER...the numbers I just gave you is for a SMALL reg. tomato, not a medium one....For a MEDIUM tomato, sliced, 1 cup of it would have 7g carbs - 2g fiber (5g net carbs), and 4g sugar. You used TEN MEDIUM SIZED tomatoes, and half of them were heirloom, which you said will add the sweetness, and half medium sized . Heirloom tomatoes have 7g carbs for a medium sized one, 1 g fiber (which equals 6 net carbs), and 4 g. sugars. In five medium heirloom tomato, you would have approx. 35g carbs, 5 fiber (net carbs=30g) and 20g sugars. You can figure what the other medium sized reg. tomatoes would be...then add the five regular ones with the five heirloom...for total net carbs. The average ketchup bottle hold 13 oz, and a serving size is 1 TBSP...there are approx. 23 servings in one bottle. (Seriously, WHO only uses on TABLESPOON of ketchup??)
isn't cooking tomato makes it very keto unfriendly? considering you are basically releasing sugars... sure no added sugar but tomato itself is not sugar free, a few tablespoons of this ketchup might as well go almost to your carb limit i suppose.
Correct (kinda) Sugar in raw uncooked tomatoes is "lower" per serving because sugar is diluted in the water content. The same amount of cooked-down tomatoes will have a higher concentration of sugar per oz as its raw counterpart. This is because water is has been removed while tomatoes carbs remain. long story short, moderation for any ketchup recipe. And def make your own so you can choose lower sugar tomatoes to start with.

Man, I tried this and it kinda just came out like tomato sauce instead of ketchup. Idk what I did wrong. Maybe I need more vinegar? I had to make some adjustments because I was only doing a 1/4 recipe
