I made this tonight with a mix of regular mushrooms and some morels that I was given. I used the mushroom soaking broth and while it did turn everything a drab brown, it was so good! I love the mix of the cauliflower with mushrooms - the flavors work well together.
I made this tonight. I did not use the wine. Wow, so good. Was everything I could do to not eat the whole pan! Thanks for this recipe, I'll be making it again.

I made this for dinner along with salmon filet. I did add asparagus to the recipe and I must say this was delicious and hard to distinguish that I used cauliflower rice. I will make this again. Thank you
Carolyn! My wife makes rice pilaf with cauli rice. It's really good. But this is different so i have to try it. I understand your concern with eating hair for dinner. I have that problem about everyday cause i have a ZZ Top beard. It can get in the way at times. So i put it in a ponytail and shove it inside my shirt. 😃 Problem solved! .................................. 😎👍👍

This looks delicious, and I haven’t tried making risotto in the 8 years I’ve been keto.😳 Problem……..I don’t have any white wine in the house …..I don’t drink and hubby is a red wine guy ……. What can I use as a substitute?? I do have some “verjuice” on hand (unfermented juice from young grapes) could I use that?? 🥴

Is there a sub for the Parmesan cheese? I have to be dairy free. Dairy free Parmesan cheese doesn’t work the same way . Should I try and thicken with some Xanaxathan gum? Does the Parmesan affect the flavor a lot? I can sub the other things, but not the Parmesan.
Oh my gosh, I thought I saw a hair in the pan before the end of video played but said na can't be. It was probably the cheese. I had hair, mine, in the Christmas cookies that must have come off my sleeve. I had just blown my hair dry so now I'm so worried about it.
