INGREDIENTS
4 large egg yolks
1 teaspoon (5mL) vanilla extract
zest of 1 lemon
½ cup (100g) powdered erythritol
1 ¼ cups (300mL) hot heavy whipping cream
3 tablespoons (45g) salted butter
½ teaspoon (1g) xanthan gum
Gradually add the hot heavy cream to temper the egg yolk mixture. Cook and keep stirring in low heat until thickens. Let it cool and refrigerate until needed.
7 large egg whites
1 tablespoon (15mL) lemon juice
½ cup (100g) granulated erythritol
powdered erythritol for dusting
Beat the egg whites in low then medium until stiff peaks.
Bake at 330°F (166°C) for 20-25 minutes until top is golden brown.
Refrigerate the cake for 30 minutes before serving.
Yields 10 servings (macros per serving)

Battre les blancs d'œufs à feu doux puis moyen jusqu'à ce qu'ils soient fermes.
Cuire au four à 330 °F (166 °C) pendant 20 à 25 minutes jusqu'à ce que le dessus soit doré.
Réfrigérer le gâteau pendant 30 minutes avant de servir.

ضعي الكيك في الثلاجة لمدة 30 دقيقة قبل التقديم.

This is very similar to a Filipino dessert, it’s called Brazo de Marcedes. I think the only difference is that we use Vanilla instead of lemon. I’m definitely going to try this. Thank you😊

Wich comes from the traditional Spanish _Brazo de Gitano_ or _de Reina_ (queen in Spanish). Surely it has to do with the fact that in 1878 died the queen Mercedes soon after turning 18. The story behind her wedding with the king was very romantic and her tragic end after less than a year of marriage, being so young and pretty, impressed all the Spanish society a lot.

So soft and pillowy I might say. I had this before way back in 2015 when we had our vacation in Southeast Asia and one of the countries we visited was the Philippines. I'll bet that your meringue cake will brown quickly, you should keep an eye on it and be ready to put a sheet of parchment over it if it starts to get too dark.

Perfect timing. I was working on this type of cake . ill try your recipe. Question , will the erythritol powder crystallize after refrigeration? Also, How many minutes should you wait to cool the meringue so that it wont crack when you roll it? Thanks

Hello dear, I always use powdered erythritol in all my pastry cream recipes and I don’t have any problems with it.☺️ For the meringue, just let it cool for 5-10 minutes. Enough time to generously dust it with powdered erythritol, flipping it, piping and spreading the pastry cream then rolling it.🤗

Hice el bizcocho exactamente como indica la receta incluso con el mismo molde, el bizcocho quedó duro y bajó mucho se quedó plano, cuando iba a enrollarlo se agrietaba y rompía por llevar erithrytol. El relleno rico como cualquier otro pero el bizcocho un 0.

Is there any other thickener I can use? Xanthan gum has such a terrible taste when I make things with it it's all I taste. Or can I omit a thickener?

You can use 1-1.5 tsp of powdered gelatine instead of xanthan gum.❤️

The vanilla custard is disgusting - xanthum gum made it have a super slimy texture and it did not thicken like in the video. The bottom egg white part turned out great and rolls beautifully

Mine broke when i rolled it!what a pitty! Maybe because was too cold? Does it have to be kind of warm when rolled?

Hello Pamela! ❤️ Just let it cool for 5-10 minutes. Enough time to generously dust it with powdered erythritol, flipping it, removing the parchment paper, piping and spreading the pastry cream then rolling it.🤗

I let my cake cool too long now the browned top is uhm...crackley(?) Any suggestions how to get the top to resoften so I can roll it? Otherwise I'm just gonna slather the custard on and serve it open face.

@@ketoserts i baked it for 24 min, and it came out soft, but I had to run an errand and by the time I returned, the browned top had become stiff. I wrapped the entire cake in plastic wrap, and it softened up again, but not enough. I cracked when I tried to roll it. Also I didn't thicken the custard enough so it was still runny even after chilling overnight. But, it still tasted good. I think I may use less sweetener next time. It didn't seem that sweet in parts but altogether, Wow! Its powerful. I think my tastes have changed to enjoy less sweet now. Thanks for all the cool recipes BTW.

You can use powdered gelatine to thicken up the pastry cream. Around 1 to 1.5 tsp. ❤️
