A snack seems too simple and lonely without a kick of sweet, tangy chutney and masala. I have prepared 3 different chutneys to satisfy our tastebuds. They are simple and can be easily made in a minimum time.
Apricot Chutney is sweet and can be stored for a month in a refrigerator. It goes best with Dahi Baray, Fruit Chaat, Fried Fish, and more. Imli Chutney is tangy yet sweet enough to make our Dahi Bara irresistible. It can be enjoyed for a month if kept refrigerated.
Hari Chutney is spicy and tangy to enhance the flavor of samosas and papri chaat.
Home-made Chaat masala is very satisfying and if not better, equally as good as store-bought masala.
Ingredients:
1. Khubani ki Chutni
2. Dry Apricots - 14 Oz
3. Salt - 1 tsp
4. Red Chili Flakes - 1 tsp
5. Sugar - 1 cup
Hari Chutney
1. Cilantro - 1 & ½ cup
2. Green Chilies - 3 count
3. Lemon Juice - 2 TBSP
4. Black Salt - ½ tsp
5. Salt - ¼ tsp
Imli ki Chutney
1. Seedless Tamarind 150 grams
2. Salt - 1/2 tsp
3. Black Salt - ½ tsp
4. Cumin Seeds - 1 tsp
5. Red Chili Powder - ½ tsp
6. Kashmiri Chili Powder - ½ tsp
7. Chopped Ginger - 1 tsp
8. Sugar - ½ cup
Chatpata Chaat Masala
1. Solid Red Chilies - 7 count
2. Coriander Seeds - 3 TBSP
3. Fennel Seeds - 1 TBSP
4. Cumin Seeds - 1 TBSP
5. Black Peppercorn - 1 tsp
6. Black Salt - 1 & ½ tsp
7. Amchur Powder - 1 & ½ tsp
8. Salt - ¼ tsp
Method:
1. Soak dry Apricots and Tamarind separately in hot water.
2. Blend the seedless Apricots with 2 cups of water into a smooth pulp.
3. Cook apricot pulp on medium heat with salt, red chili flakes, and sugar till it thickens.
4. Make a pulp of tamarind and strain to remove impurities.
5. Cook the diluted tamarind pulp with salt, cumin, sugar, chili powder, black salt, sugar, and ginger.
6. Finely blend cilantro, green chilies, salt, black salt, and lemon.
7. Add a little bit of water if desired to make Green Chutney.
8. Dry roast solid red chilies, coriander, fennel, cumin, and black peppercorn.
9. Make a coarse powder, add black salt, salt, and amchur powder to this masala.
10. Mix well and your Chatpata Chaat Masala is ready.
11. You can enjoy these chutneys with Samosas, Dahi Baray, Fruit Chaat, Papri Chaat, and much more!
