All our favorite granola bar ingredients in one delicious recipe!
Ingredients
2 ¼ cups old rolled oats (quick or old fashioned)
1 cup roughly chopped roasted, salted mixed nuts (pecans, almonds, peanuts, pistachios, pepitas, etc.)
1/3 cup coconut flakes
1/3 cup honey
3 Tbsp maple syrup
2/3 cup peanut butter
1 tsp vanilla
½ tsp salt
½ cup mini semi-sweet chocolate chips
¼ cup dried cherries
¼ cup raisins
Flaky sea salt, for sprinkling
Directions
- Preheat oven to Line an 8x8-inch pan with 2 pieces of parchment paper, letting the parchment hang over the edges.
- Combine oats, nuts, coconut, chocolate chips and dried fruit in a large bowl.
Combing honey, maple syrup and peanut butter in a saucepan and heat over medium heat just until peanut butter has melted, and mixture is smooth.
- Remove from heat, add vanilla and salt and let cool for 1-2 minutes.
- Pour peanut butter mixture over oat mixture and stir to combine.
- Place into prepared pan and press well. Note: If you have another 9x9 pan, cover the top of the granola mixture with a piece of parchment and press with the second pan.
- Sprinkle with flaky salt and bake for 15 minutes until golden brown. Remove from oven, leave in the pan and let cool completely.
- Lift from the pan using the parchment pieces, cut into bars and serve or store in an air-tight container.
