Measuring flour and sugar by weight will give more consistent results every time you bake. What they failed to show is the chart on the inside cover of the box telling how to convert from cups to ounces or grams most dry ingredients that can be sifted. Many recipe sites (like King Arthur Flour have the ability to convert measurements and print the recipe to bring to the kitchen. Notice the difference in measuring flour and how it affects the baking results. Many dry cake and breads are the result of too much flour in the mixture. Most bakers do not take the time to sift flour and many old cook books have measurements based on sifting flour before measuring. The hopper holds about 4 cups of flour which is enough for most single cake or cookie recipes. and single loaves of bread.
I love mine. I put my wet in the bowl, measure my dry into the shifter and turn it on. It sifts all the dry into the bowl without making a mess. I've become a better baker with weighing my ingredients. I weigh each dry and zero out and weigh the next and sift all at one time. The scale is easy to read and use.
