তিনটে বড় বড় ডেকচি ভর্তি বিরিয়ানীতে বেশ ভালো পরিমাণে ঘী দেওয়া হয়েছিল,সেখানে তিনটে ডেকচি ভর্তি বিরিয়ানীর জন্য আর মাত্র ৫০০গ্রাম ঘী যোগ করা হলো??!! ওটা বিরিয়ানীতে না দিয়ে গরম ভাতের সঙ্গে মেখে নিয়ে খেলে বেশি ভালো লাগতো 😂😂😂
সেদিন আমেনিয়াতে বিরিয়ানি খেতে গিয়েছিলাম....আমেনিয়া এখন যে এত খারাপ বিরিয়ানি পরিবেশন করে তা আগে জানতাম না ... আমেনিয়াতে বিরিয়ানি খাচ্ছি না মাসলা দেওয়া পান্তাভাত খাচ্ছি ভুঝতে পারলাম না ! ...কিন্তু বিরিয়ানির দাম নিল Rs.১৯০/- per প্লেট ...একদম বাজে বিরিয়ানি ভাঙা ভাঙা রেশনের Rs. ২/- কিলোর চালের বিরিয়ানি হবে ..আর মাংসের পরিমান এত ছোট যে মাংস খুঁজে পাওয়াই কঠিন তাও আবার চর্বি ভর্তি...বিরিয়ানিটা এতই খারাপ যে খাবার অযোগ্য ....ওয়েটারকে বিরিয়ানির প্লেটটা চেঞ্জ করে দিতে বললাম...প্রথমে সে বললো চেঞ্জ করা যাবে না ...তারপর অনেকবার বলাতে সে সেটা চেঞ্জ করেদিল কিন্তু বিরিয়ানি পরিমান আগের চেয়ে অনেক কম .....আমার কোনো উপায় ছিলোনা তাই সেটাই খেতে হলো...আর আমার বন্ধু রুটি আর মাটন কষা অর্ডার দিয়েছিলো ...কলকাতায় কোথায় আছে যে পাতলা পাতলা পোড়া পোড়া রুটি,একটা রুটির দাম Rs. ৬০/- per piece .... আমি তো কোনোদিন শুনিনি....আর মাটন কষাতে মাটন নেই মাটন ছাড়া আছে একটা হাঁসের গোটা ডিম্ আর আলু ভর্তি ....আমি আর কোনোদিন আমেনিয়াতে কোনোকিছুই খেতে যাব না ...আপনিও যাবেন না ...ভুল করে কেউ আমেনিয়াতে গেলে ক্রেতা সুরক্ষাতে ফোন করে নেবেন অবশ্যই ...... @Sayan Datta being a doctor you eat that kind of food...what will you suggests your patients....giving the pressure ,hectic schedule and irradicate lifestyle of a doctor his diet should be lots of boiled vegetables..soups ..fat free yogurt ...salads and lots of fresh fruit ...no soda..alcohol...smoke and only milkshakes with brown sugar and yogurt ....this is what the doctors in South and USA follow ....I have seen doctors who stays in hospitals for continuous 8-9 days before taking weekly off and they are perfectly healthy...I have never seen famous doctors eating spicy oily biryani ...they travel a lot ...does night shifts and emergency calls....afternoon 4pm or early morning 2am ..they are always dealing with patients with same energy and dedication ....hats of to their professionalism....people doesn't become successful and famous just like that...extremely sad to see bengali doctors so negligent about their own health ...
@@misti444Totally wrong perception that eating biriyani goes against good health. Maintaing a good health/fitness solely is individual's responsiblity/subject. Who says south indian doctors do not eat biriyani or more generally spicy food be it veg or non-veg. I am from Hyderabad which is spicy food hub because of its rullers origin. Not only biriyani, off late eating Haleem has reached to its peak popularity. Problem is not with eating, it is with its limit. Current slogan is " sab khao, kom khao"..
tried amenia biryani last year itself.. visited kolkata after 10 years as i am not from kolkata i am from Delhi(probashi)... trust me there was nothing special in amenia biryani... waiters were rude... not professional at all... 2 of the waiter started fighting in between customers... just bcoz kolkata serves aloo sheddo and deem sheddo in biryani, does not necessarily makes it good... it was the most ordinary expensive biryani i have ever tasted. Nevertheless, i am a fan of kolkata street food not these big outlets of kolkata...
Next time pls visit Dada boudi @Barackpur..2 minutes from station...btw I second that Aminia biryani is not extra ordinary...but it's far better than Delhi biryani.

Sorry to say that he don't even know also how to make Biriyani only put a big chef cap is not a chef he don't even know also how to wear a chefcap. Aminia biriyani is the worst one I have taken ever. Honestly , the star biriyani of Dhaka is far better and authentic one. Here music was fantastic rather.
Recipe actual.1.Heat kadai first.2.add ghee to kadai.3.heat the ghee.4.add whole garam masala(cardamon,bay leave,cloves,cinnamon,javetri) to ghee .5.wait for whole spices to crackle.6.add sliced onion to ghee and saute with garam masala.7.after onion turns light brown add mutton(which should be kept in salt water for at least 30mins and then dried).8.saute mutton for 5 mins.6.after that add chilli powder(yellow or red),pinch of kalimirch,ginger garlic paste,salt,pinch of Biryani masala1(javetri elaichi powder),Biryani masalA 2(cinnamon,shahjeera,jaifal,kebab chini,black pepper,starannise,fennel seed powder mix) and saute for 10 minutes.7.then keep the mixture in low flame for 5 minute until water separates from mutton.8.after that add curd.9.mix the curd well and then add water.10.cook until the mutton is 80 percent done.11.separate the mutton and gravy 12.gravy should be filtered 13.in pressure cooker boil fat of mutton with salt and water .Keep the stock and discard the fat then .Keep juice aside.14.Rice preparation as normal(in saucepan heat water along with lemon juice ,slight ghee,whole garam masalas and bay leaves ,lots of salt and some keora .Bring to boil.then add presoaked 1hr dehradoon or basmati rice to boiling water and boil rice till maximum 6 minutes and then strain to dry and keep aside.15.now comes mixture part.in a flat lagan or patila add aloobukhara 10 piece and lemon juice of 1 lemon and mix.then add Biryani masalA 1 and 2 and mix.masala 1 should be more 4:1 always.then add the filtered gravy of mutton and mix .Then add milk and mix.then add ghee and mix.then add precooked mutton and mix.then on top add pre fried potato and settle.on that again sprinkle Biryani masalA 1 and 2 and fried onions or beresta.ater that add rice in layer 1.sprinkle gee on top and khoakheer .also add masalA 1 pinch of.Then sprinkle saffron mixed in hot water .After that again add rice in final layer.above the final layer sprinkle remaining milk evenly(mixed with both Biryani masalA 1 and 2 ,chilli powder and salt).then sprinkle the fat juice mixed with ghee evenly.finally rose and keora water and again lemon juice and onion fry on top.finally seal the patila with atta and keep in dum.dum technique for mutton (if small quantity as 1kg for home then 10 minutes high flame and 30 minutes low flame above tawa ,),if big quantity as 6-15 kg then 5 minutes high flame and 15 minutes low flame .Then removing from flame above the lid keep some burning coal and keep for 10 minutes.thats it.
that is only reason people of India died so early. because of Indian cooking style, best cooking is Bengali family cooking, not too much spices or ghee or oil, in order to live longer, learn Bengali simple cooking style.
Sorry but had to share my observation...after eating so called non oily non spicy food also bengali 's contribute to almost 80% of heart patients who travel to South for cardiac disease...can we still say that bengali food is healthy ...it might be tasty but definitely not healthy ...neither are the lifestyle of Kolkata people....
