The best Korean Fried Chicken - Crispy coated buttermilk fried chicken smothered in a spicy Korean Gochujang sauce.
One thing that I absolutely love as a recipe creator, is when I put a plate of food down in front of people, and the conversation stops the moment the first bite is taken. Just quiet, wide-eyed, satisfied munching, with the occasional 'Mmmmm' and 'oh my god, it's so good' until it's all gone.
That moment when everyone wants to focus all of their senses on what they're eating, and nothing else matters.
That's what happens with this Korean Fried Chicken Recipe.

Ingredients:
Chicken and marinade:
4 chicken breasts - sliced into long thick strips
1 cup (240ml) buttermilk
1/2 tsp salt
1/4 tsp white pepper
1/4 tsp garlic salt
Crispy Coating:
1 1/2 cups (180g) plain (all-purpose) flour
1 tsp salt
1 tsp ground black pepper
1/2 tsp garlic salt
½ tsp celery salt
1 tsp dried thyme
1 tsp paprika
1 tsp baking powder
1 tsp chilli flakes
vegetable oil for deep frying - (at least 1 litre/four cups)
Korean Gochujang Sauce:
2 tbsp gochujang paste
2 tbsp honey
4 tbsp brown sugar
4 tbsp soy sauce
2 cloves garlic - peeled and minced
2 tsp minced ginger
1 tbsp vegetable oil
1 tbsp sesame oil
To Serve:
3 spring onions - sliced into thin strips
1 tsp sesame seeds
½ tsp chilli flakes - (red pepper flakes)

That all depends on which Gochujang paste you choose, they come in mild, hot and extra spicy

I needed a fast recipe tonight, as I was feeling lazy, this worked so well. I used a ready made fry coating, fried some chicken and then coated it with the gochujang sauce you made and it was so good, I made a bit too much sauce for the amount of chicken I had, but I was able to cut down the intense fermented taste with some ketchup. Thank you for sharing!

Y'know, that chicken looks SO GOOD coming out of the fryer that I'm tempted to just serve it sans the spicy sauce. I can tell right away that chicken tastes terrific with or without the sauce. The one detriment of adding the spicy sauce is the chicken loses most of its crispiness. This recipe looks damn good that I'm gonna serve it right outta the fryer. No sauce. Thanks for a delicious looking recipe.

The simplest way to substitute buttermilk is to pour 1 Tbs. of lemon or vinegar into a 1 cup measurer and then fill the rest of the measuring cup with milk. Then gently stir the mixture and let it sit for about 5 minutes.

You did a good job but try twice frying the trick to a extra crispy skin :) 345 degrees for 10 minutes then finish off at 375 degrees until crispy brown skin :) Also it helps to marinade the chicken at least 24 hours in a "brine" of your choice of ginger and other goodness :)

Looks a lovely dish very similar to my own recipe apart from the Gochujang paste..It's an acquired taste that i just can't get my head round about...I've tried it a few times...It doesn't matter how much you use you can still taste it..It's like black bean sauce you either like it or don't..Very professional show by the way. Recommendation by RU-vid..I've just subscribed..

I don't know where you live Steve, but large Asian supermarkets will have it. It's also easily available online on places like Amazon for example.

Using breast meat is not as juicy or flavorful as thigh meat. We (those of us in the U.S. who knows, or are very experienced in frying chicken) use thigh meat.
