Most of our dishes are either sour, most of the time salty. Maybe because salt is one way to preserve water in our body because its very hot here. Sour since we use available ingredients like green mangoes, guava, tamarind, for sour based recipes like sinigang,Vinegar for others (ect). Anyways, thanks for appreciating our food. I miss bopis!!! Oh my.

I eat this a lot when I was in Manil before. It is hard to find this dish in the Visayas and Mindanao. I think this dish is from the northern part of the Philippines. The meat ingredients are the heart and lungs of a pig. It is a cardiovascular dish hahaha. I like it so much because it is chopped into very small cubes and the sauce is creamy. We have a similar dish in the Visayas and Mindanao called paklay but the meat ingredients are pig's liver, kidney, heart, stomach and ox tripe.
