おばあさんにははじめまして! i lost my mom over 35 years ago (just after graduating high school) and this video was both a sadness and glee. i could pretty much understand everything you both said - i am SO glad she let you continue speaking japanese, as mine didn't because she'd been told if i did i'd never learn english. So many of your mama’s mannerisms’ remind me of my mama-right down to how she tasted the kyuri no su. I know that I tell you that all the time, so thank you for sharing your okasama with us! I happen to have 3 kyuri from Japan, in my fridge, along with all of the ingredients, so guess what I’ll be making today? YES! Thank you! My okasama used to make nasubi no nimono all the time. Hello, Nickey! Hello to your wonderful mother, also! Thanks to both of you for sharing this delicious kyu-chan recipe! Have you ever shopped at Trader Joe's? It looks like there is one in Honolulu. At our local Trader Joe's, they sell packs of Persian cucumbers, and they are small and delicious, similar to Japanese cucumbers. The price is really good. I've used them to make kyu-chan before and it worked well. I hope you will have a good holiday weekend. Erin Uber Sadly there are no Trader Joe's in Hawaii. We would be celebrating if there were! We have those Persian cucumbers here at Don Quijote and Costco and you're right that they would work very well in this recipe. Whenever I see your name I think of anko...I love anko, too😄.

Yuuummm! I love tsukemono. Every time we visit Hawai'i, I gotta eat some. No can find any where I live. Can't wait to try this. Do you know if she has a recipe for the really crunchy purple eggplant one? I've been searching for a recipe for years now but haven't found one close to what I'm looking for.
Many are quite easy to make yourself at a fraction of the cost. That's what I do despite the availability of plenty of Japanese markets in my area. There are plenty of recipes on RU-vid. You can substitute hothouse cucumbers or Persian cucumbers if Japanese cucumbers are not available in your area. They are a little different but work quite well.
Ahh I cook like your mom too 😂 Constantly tasting and tweaking ingredients lol! I love these 'pickles' btw, I made a version without the mirin. I miss having mirin in my kitchen, it's hard to get where I live! Although if I can find an open grocery that sells any Asian cooking wine at this point, I would be pleased to try mom's recipe 💖

The marinated cucumbers will be much better in about a week when it has aged some. She is so sweet and must love doing things like this and love eating those foods also.

This is such an interesting recipe. I never thought the cukes were going into the hot sauce. I thought the sauce was going to cool down and the cukes marinated in it. Is the taste like sanbaizuke?
