I bought this exact coffee on my visit to New York last week. I bought too much coffee, so that one is frozen for now. I definitely like fermentey flavor more than you do, so I hope I enjoy it, kinda disappointing that it's not a true Nordic light roast though.
Sadly La Cabra hasn't been for years and it's a bit of a mystery why they made such changes to the way they roast coffee. But hopefully you do enjoy it, especially if you are into heavier coffees 🙂
agree, I use 1:16.5 -17 and coarser grind for their CANAJAL, guatemala washed , still very strong fermentation toasted taste at day 36,but slightly improved in the texture of the coffee
