Labra tarkari recipe: Growing up in a Bangal (immigrant East Bengali) household in a refugee colony, Lokkhi pujo was the biggest pujo at home. The sudden emptiness one feels knowing that Durga pujo is over was somewhat ameliorated by the knowledge that Lokkhi pujo is just around the corner. On the eve of Lokkhi pujo, heaps of vegetables would be cut and prepped for the array of dishes that were to accompany thamma's bhuna khichuri (a dry polao like khichuri). The star of the show-aside from the bhuna khichuri-was thamma's labra'r torkari. On the evening of Lokkhi pujo friends, family and neighbours would sit down to eat thamma's bhuna khichuri and labra. The next morning, we would have the leftovers for breakfast. Some family members argue that it tastes better stale than on the same day.
This recipe was passed on to thamma (my paternal grandmother, Durga) by her mother-in-law, my great grandmother. It has a particular set of vegetables cooked in a specific order. Family recipes differ based on which vegetables go into the labra-in our family, for example, mulo (radish), common in many households, is not added.

Families tend to have a unique set of vegetables for labra. For example, in our family we don't put radish (mulo). Comment with the set of vegetables that are used in your family's labra recipe. e.g. our labra has the following vegetables: - alu (potato) - mishti alu (sweet potato) - gathi kochu (taro corm) - begun (brinjal) - kachkola (unripened banana) - thor (banana stem) - phulkopi (cauliflower) - badhakopi (cabbage) - sheem (flat beans) - borboti (yard-long beans) kumro (ripe pumpkin) Share yours!

Well I am not a Bengali i have eaten Labra only once in previous year Durga Puja of Abhijeet Bhattacharya Sir in Mumbai and it was amazing with kichuri, bhajas, chatni and payesh just lip smacking will be looking forward to this bhog. Shubho Sharadiya. Joy Maa Durga

আমি মুসলিম। তবু বিশ্বাস করেন পূজো আমার ভাল লাগে৷ সবার চোখেমুখে দারুন আনন্দ থাকে আর পূজোতে খাবারের যে বৈচিত্র আছে বাংগালিদের ভিতর সেটা অন্য কোথাও দেখিনা৷ এই ধরেন ল্যাবরা,লাড়ু হরেক রকমের মিষ্টি মিঠাই! এইসব শুধু যেন আর্ট লাগে। যা ভাবছি কাল পরশু এটা বানাবো৷ যদি একা মানুষ তবুও বানাব। ধন্যবাদ রেসেপি দেওয়ার জন্য।

People don’t appreciate how healthy Bengali cuisine is! This is my most favourite torkari and I wait for durgo pujo to have it in bhog with khichuri ❤️❤️❤️ nothing trumps this combo in Pujo! I hope ae bare pujo dekhte pabo ❤️

My partner and I are in a middle of a fight and I decide to clean the study table. There is only standing fan in our house. And he took that with himself in the living room. I haven't eaten anything since morning. It's 6.30 pm now. It's freaking hot. And in the middle of the cleaning session I decide to watch Bong Eats. Banana stem is such an underrated vegetable.All that fibre is so good for your body.So apart from a couple of south Indian states W.B is probably one of the few Indian states that uses banana stem.Labra seems very similar to aviyal and undhiyo. All are one pot dishes,using a medley of veggies and a fair amount of coconut. Your videos are very useful for us non-bongs who like your cuisine but are unable to find good vegetarian options even in bong restaurants. Thanks for all your hard work and quality content. s Keshav yep banana stem is quite common in bengali cuisine - apart from labra, there are dishes where “thor” by itself is the central element. Same with banana blossoms, and of course unripe bananas as well.

Being hardcore ghoti we had no concept of labra at lakkhi pujo which again took place as dipanwita lakkhi pujo during diwali. Menu was designed & cooked by my thakuma & ably helped by ma, kakima & domestic help. Bhaja mug daler Khichuri, aloo phulkopir makha makha tarkari, phulko luchi, gobindbhog chaler payesh, tomato amsatta chutney aar panch rokom bhaja. Served in svetpathorer thala for lakkhidevi & kalopathorer thala for narayan. After bhog utsarga, we kids(many of us-big family) line on dalan with kalapata. Thank you bong eats for taking me down my memory lane & those were fantastic days. So overwhelmed by childhood missed telling you that the labra has come out lip smacking.little time consuming but i'll reduce quantity of veggies. Hope that will help. Pretty unique & one such side dish is enough for lunch.

Finally I could make labra! I didn't have all the vegetables used here, also couldn't follow the measurements, neither could I use coconut due to allergy, but I followed rest of the cooking process and the output was awesome, exactly how I desired it to be! My family also liked it very much. Thank you very much for this recipe as labra has always been in my favorite list but could never make it perfectly.

My mom taught me how to take those fibers out of the banana plant stem ... She used to do exactly the same thing using the traditional vegetable cutter, you know where you can sit and cut the vegetables (called Paniki in Odisha/ Boti in Bengal - Courtesy of Wikipedia). One of the reason I love your videos is that it take me back to the old days... So, Thank you for making such wonderful videos..!!

এত গ্রেসফুল ভাবে রান্না করা যায়! আপনাদের এই চ্যানেল না দেখলে জানতে পারতাম না, প্রত্যেকটা জিনিস, সবজি কাটা থেকে রান্না করা খাবার পরিবেশন - সব এত সুন্দর ভাবে দেখান আপনারা, সত্যি আমি হা করে দেখতে থাকি। বাঙালি হয়েও বাঙালির রান্নাকে এত সুন্দর মনে হয় নি, যত সুন্দর ভাবে আপনারা দেখান! আপনাদের ভিডিও দেখে মনে হয় আমিও হাত খুন্তি নিয়ে রান্না করতে শুরু করি। তবে, প্রত্যেকটা ধাপ এত পারফেক্ট ভাবে দেখানো হয়, ভাবলে অবাক হয়ে যাই, এমনকি বাজার করা সবজি গুলো এত আকারে ও রঙে পারফেক্ট থাকে, নিজে বাজার করতে গেলে ওই রকম সব্জি খুঁজে পেতে দম বেরিয়ে যাবে। আরেকটা না বললেই হয় না, প্রত্যেকটি জিনিসের সাউন্ড এত ক্রিস্টাল ক্লিয়ার যেন মনে হয় আমার সামনেই রান্না হচ্ছে। আর এটা ওটা দেখে , সব চেয়ে অবাক হয়ে যায় ওই চাক্কু টা দেখে! বটির বাপ ওই চাক্কু, যোগ্য হাতেই ওই চাক্কু রয়েছে 🙂। আমার দেখা ইউটিউব ও টিভির রান্নার প্রোগ্রামের মধ্যে সেরা আপনার এই বং ইটস। ধন্যবাদ। চাক্কু টার জন্য মন কেমন করে,😊 মাঝে মধ্যে মনে হয় যদি আমারও এমন একটা চাক্কু থাকত!!
