Lamb Seekh Kabab Recipe | The Best Homemade Lamb Seekh Kebabs

Follow my recipe to learn how to make my simple and easy home made lamb seekh kebab's also known as kabab in other parts of the world. They are a popular Indian appetizer typically eaten with a side of green chutney and naan or pitta bread. These flavourful bites of lamb are made with freshly ground whole spices and are either typically cooked in a tandoor oven or shallow fried like I have done. These are perfect as a starter or a main with naan bread and salad, you'll keep coming back for more.

Takes approx. 20 mins to make after the initial 30 min meat marination and makes 16-18 kebabs
Ingredients:
500g lamb mince (20% fat)
1 medium onion
4 green chillies (optional)
good handful of fresh coriander
1 teaspoon of:
salt
chilli powder
coriander powder
garam masala and cumin seeds
1/2 teaspoon turmeric powder
oil to shallow fry
16/20 6inch bamboo skewers

Ai Ai, thank you for your kind words 😊 Yes I've found that a written list of ingredients always help as people want to be able to see the actual list when out shopping or cooking so they know what they need. It's not very practical to be watching me or anyone for that matter cooking whilst trying to gather ingredients 🤣👍

I've used this recipe everytime I have someone over and it never disappoints. I use 1.5 the tsp amounts as I enjoy that flavour

Ahh thank you for your kind words! Mine is a very old Braun brand which works brilliantly. I have since purchased another up to date Braun food processor which is great! Kenwood is also a good brand. Hope that helps 😊

I've tried a lot of kebab recipes. This ones the best. On wood fired Charcoal would even better.

Looks amazing as always with your recipes. With Ramadan approaching, I was thinking about making these as a batch and frying. Can these be frozen? Would you advise cooking first and freezing, then microwaving? Or freezing them raw and frying while thawed?

Hi there XX KK, thank you for your comment. Firstly, thank you for your kind words! Yes you can batch make these and freeze them. I would advise to fully cook, cool then bag them and freeze! So they're fully cooked. We really don't need added work during Ramadan to be half cooking food and then cooking again! Want to make things simple and easy. Just take out when needed and thaw.. then just microwave on full for say 1/2 mins (depending how powerful your microwave is) and serve piping hot! 😊

Lovely recipe I tried this yesterday,but needed up making round kebabs as I had metal skewers and the meat didn't stick.not sure what happened.but in terms of the herbs amazing taste.

Hi I’ve been mastering these for weeks however my mix seems too wet is it the moisture in the onions also why no ginger garlic?

Andrew, it may be that you've either blitzed the onion too much and they've released to much moisture or you've used a larger onion - yes it can make a difference. You can either refrigerate the mix for 30mins and try to skewer the kebabs as the mixture will be cold or you can add around 2 tablespoons of gram flour into it which will the mixture to bind together. You can add ginger garlic into this of you wanted to, I just didn't feel it needed it.

Hi Mike yes you could do these on a BBQ, just be careful as to the length of the time they are on the heat, also you may want to have your butcher add a little more fat to the meat at a 80/20% ratio to stop them drying out - in the pan they don't loose the fat as much as they would on a BBQ.

Hi Zoe 2018, thank you for your comment. Most definitely but just remember that the mince needs 20% fat in it to help the Kebabs remain juicy and moist whilst cooking.

Hi Abbey, yes they could, of course if you have lean meat then they will not come out as tender. Most kebab meat mixes should contain 80% meat and 20% fat for grilling/griddle and BBQ'ing. I hope you like them.

I would guess the meat you used a very small amount of fat in it - we normally use something called palu da keema (meat taken from the ribs) as that has some fat and meat - or ask your butcher to add some fat to your meat if its lean - around 15-20% is good.

I agree they do taste much better on a BBQ, not everyone has access to a charcoal BBQ though, and some do not have gardens either. I like to try to make my recipes accessible to all :)
