Just made this for the first time tonight. And you are right, the sauce IS Boss!! It was absolutely delicious!! I made white cheddar mashed red potatoes and it went extremely well with the dish. I made this the other night. Very good. I left out the sugar and used sweat onions instead of yellow which made the recipe more than sweet enough. I also used chicken stock instead of beef which made the dish a little more mellow, but still very flavorful and the sauce was still brown. Like most things - it was better the second day. :)

In South Africa we've been cooking chicken in french onion soup for years. Some of our recipes include mixing apricot chutney with the onion soup and baking the chicken in that. It's very good. But we don't do the cheese over chicken.

Great recipe. I'm making this. If you're on a heart healthy diet like I am skip the extra salt and limit the brown sugar. You definitely want to release the fond or residue from cooking the chicken so a red wine or just unsalted broth/stock works well.
Laura, try using dry Vermouth instead of White Wine. You only need a little bit and it's totally shelf stable. All it is, is lightly fermented wine in the first place. P.S. this looks delicious!!
I like the flavor of onion but don't like the texture, could you use a stick blender before adding the chicken in order to smooth it out or would that affect the sauce?
