Today I'm doing Lazy Vareniki / ленивые вареники. This is actually just Russian dumplings with cream cheese. I make this recipe very often when I don't feel like working with Wareniki for a long time. The recipe is super easy and very quick. Check out the video and you will know why they are lazy Wareniki. 😊😀

Ingredients list for Lazy Vareniki / ленивые вареники:
200g grainy cream cheese
1/2 teaspoon of salt
80 to 90g flour (type 405)
1 tablespoon of sugar
1 egg yolk
1 egg white
2 to 3 tablespoons clarified butter (to taste)
brown sugar (to taste)
1 tablespoon sour cream

Vareniki are a popular Russian dish. However, you need enough time to shape them. If it has to happen quickly, then Lazy Wareniki are just the thing. Here I'll show you a simple recipe for Lazy Vareniki.
Even if these vareniki differ in taste and appearance from the usual, they are just as tasty. You can serve them either straight or with sour cream.

Preparation: Lazy vareniki - Russian dumplings with cream cheese
1. First we will process 200g of grainy cream cheese. To do this, we first let the cream cheese drip out in a sieve. The drier the better.
2. Now put the cream cheese in a bowl together with 1/2 teaspoon salt, 1 tablespoon sugar and 1 egg yolk. Mix everything well.
3. Next we beat 1 egg white and add it to the cream cheese.
4. Now we add approx. 70 to 80g flour (approx. 4 to 5 tablespoons) to our cream cheese and mix it well together.
5. We put the finished dough on our worktop. We dust the worktop with a little flour and knead it a little more.
6. We cut the dough for our Wareniki into 2 parts and roll the dough into an elongated sausage.
7. We press the dough sausage a little from above and cut out small bite-sized pieces.
8. Put the vareniki in a saucepan of boiling water with 2 teaspoons of salt.
9. The Wareniki have a cooking time of approx. 2 minutes on a medium setting.
10. When the Wareniki are ready, we take them out and add clarified butter and brown sugar.
11. Our Wareniki are ready. Good Appetite.

I wish you a lot of fun and bon appetite with this recipe. Just because the vareniki are called lazy vareniki doesn't mean they are bad. Garnished with clarified butter and brown sugar, they are in no way inferior to the original. Sometimes you just don't have the time or don't want to use many ingredients.
