Lechon Marination Paste:

1 tbsp fine grated lemon zest / zest from 1 lemon (similar to 3 stalks lemongrass)

1 shallot (sub: 1 small onion)
1 bulb of garlic (12 to 15 cloves)

Final Rub:

Gravy:

I tried making this recipe. The instructions were detailed and easy to follow. Everyone said that the dish was delicious but salty. The entire dish was eaten in 20 minutes. I did not know that when ordering or buying at a farmers market, you have to specify that you want the skin on the pork belly intact. Normally the pork skin is removed when the pig is processed. So the fat absorbed all the salt instead of the salt drawing the water out of the pig skin. I will try the recipe again with the pork belly with skin. All my family and friends who tasted this first attempt, want to try my second attempt.

Hi Rowena - I’ve never used a convection oven before so I’m not sure. I’d suggest keeping a close eye on it in case convection cooks it faster, to make sure it doesn’t get overcooked. Please keep us posted on how your lechon belly roll turns out 😊

Quick suggestion: I think you guys would benefit from a microphone like a lapel mic :)) The audio quality would be much better and sound more professional :) You guys don’t really have to but it’d be pretty cool to hear you guys in high quality lol

I so want to but my electric oven is only 250 degrees Celcius max. I'm afraid the skin will not achieve that same crispiness.

Hi Kurt, you lost me when adding lemon, thyme and oregano. One can use lemongrass stalks as you can slide them out when it’s done coolimg. No need to cut through them. Lemongrass is what I think sets filipino style lechon from other countries that have rolled pork belly. Just my 2 cents :)
