This lemon cake goes great with hot tea or coffee. The citrus flavour from the lemon zest and lemon juice added to the sweetness of the batter is finished beautifully by the sweet, tart frosting. Enough to give you a kick to get you through your working day. This delightful zesty cake is all made in an 8 cup Sakura rice cooker (adjust ingredients accordingly for whatever size of rice cooker you are using).
