Lemon Icebox Pie. It only takes 5 minutes to mix up. This is an easy, no bake, no cook, fresh lemon cream pie. This pie cools off hot summer days without heating up the kitchen. Whip one up for your next cook out.
It's perfect for any get together. Easy to decorate.
Ingredients:
1/2 cup of fresh squeezed lemon juice
1 to 2 tablespoons of fresh lemon zest
14 ounce can of sweetened condensed milk
8 ounces of softened cream cheese
A prepared no bake pie crust -

Becky, this is just like my mom and grandmother taught me but we do one thing differently: we only pour half the lemon juice/condensed milk/cream cheese mixture in the pie shell. The other half is mixed with whipped cream and then mounded on top. Both layers set up really well but the top layer is very light and fluffy. Thanks so much for preserving our Southern recipes!!

I looked & baked all kinds of lemon pie! My husband always siad no it's good pies but not like his Grandma made. lol I finally asked some friends about lemon pie One of them told me about a Lemon icebox pie. He said that's it when he ate it that night. I made 1 pie every 4 days fro 30 years!! God Bless

Welp, this also works as a Thanksgiving or Christmas pie--really well, because it's a light, refreshing flavor to offset the (delicious) density of an accompanying pecan pie or various other more complicated treats, AND!!!! It saves a heck of a lot of labor in the kitchen. So you can have (at least) two different kinds of pie without two pie's worth of big commitment! Woot! ('course, I made ginger snap cookies for the crust, but they're pretty easy, too).

I would like to make this tomorrow! The filling looks rich. Good choice to top it with berries. Yes our Dad was in the Koean war US Navy. An electronic specialist for troubleshooting target radar systems used back then.. He was in charge of a gun room on an aircraft carrier. He was proud to serve and would not tolerate any b.s. or disrespect for our country. July 4th was always his favorite of holidays I think. Dad passed last year. But we all have a respect and appreciation for our freedom to live a good life in America. Land of The Dream. The opportunities are endless here. Congressman are paid $174,000 a year. Sadly, heartbreakingly our representatives have FORGOTTEN that they are OUR public servants to vote the issues of the people. Our country was founded on beautiful, Godly principles, that have gone by the wayside. Democracy is a gift, that many of our people no longer cherish. i love what you do here and have been with you from the beginning and will be here as long as you continue but, your commentary on independence day, for me is mixed,. As a descendant of both English planters and African slaves i have mixed feelings on this topic but thank you for revealing my Aunt's lemon pie technique, i loved this pie as a child and wondered how she did it. Lemon is my all time FAVORITE flavor! My husband, bless his heart, is constantly trying to find me Lemon snacks/cake at the grocery stores/bakery and it's definitely not easy to find, for whatever reason. I'm wondering how Lemon curd would do in this recipe? Other than lemon being my favorite dessert flavor, I absolutely love the smell of them. Appreciate the recipe. I reckon it's always nice having another southerner on here. I love lemon and wondering if I can mix blueberries in the lemon mix before putting it in the pie? Lemons have been on sale around here lately. Just fold the berries in carefully. The sugar in the pie might make them a little juicy. That just means you will have to eat the pie faster. God Bless You!
