Another work of art worthy of one of the world's finest patissiers. But it is quite a time commitment! I find the poached lemon is a wonderful ingredient and makes quite humble desserts special.

Bruno Albouze : Bruno: Just let you know you always the best chef and top of line, love your cooking! 👍🥰you was mention their had two type of poached lemon; one is with salt , what is other one? also, I following your instruction made the poached lemon with salt, it had sit in refrigator for two years, I was use that last week with fish, the texture was very soft, colour had been more darker, can I use or too old? take care and be safe!
