3 gelatine leaves
100g whipping cream
*Lemon cream
100g whole eggs

Hi Ioan. Hope you are doing well. I was wondering if I could pick your brain. I made a very similar in shape dessert as this, but I used your mirror glaze recipe found on your channel. Unfortunately the glaze did not set when poured over the frozen mousse, it just slid off and did not set at all, do you perhaps know what the reason for this is? (The mousse was around - 15C, truffle shape, glaze was yellow, used at 31C as suggested for the specific technique I required)

Hi, Sorry to hear that 😔 The glaze sliding from any mousse cake is the reason of the mousse error. It may be your whipping cream, it should be like a melted ice cream but creamy. Also the yogurt and sugar you just need to warm it up i will say 60°c just to melt the gelatine, and combined with cold gelatine the mixture should reach no more than 35-40°c. And only after you fold in the semi whipp cream. Before glazing make sure is stone frozen the cake. With glaze you can lower the temperature to 29°c is just fine ( higher temperature thinner glaze ) Have fun 🙂

@@PastrybyIoan If I made use of a double creamy yogurt in the mousse, might that be the reason for the glaze not sticking to the mousse?

@@bakerpat if you use double cream it should be absolutely fine.

do you have any tips on how to unmould the mousse from the silicone? mine tends to deform as I try to unmould :(

@Aimee Aditya is very strange. I believe you have to check your freezer if is in good condition, otherwise I dont know what to say 😅 normally anything what you put in the freezer have to be like a stone after 2 days
