LENTIL AND KALE SOUP
INGREDIENTS
- 2 Tbsp coconut oil
- 2 cups green lentils
- 1 ½ cups carrots, diced
- 2 cups white onion, chopped
- 2 tsp garlic, minced
- ½ cup white wine
- 2 quarts bone broth
- 1 bay leaf
- ½ tsp ground coriander
- ½ tsp ground turmeric
- 1 tsp ground cumin
- 2 cups kale, stems removed and coarsely chopped
- ¼ cup fresh parsley, chopped
- 1 Tbsp lemon
Salt and pepper to taste
Heat oil in Dutch oven over medium heat.
Add lentils, carrots, and onions, and cook until vegetables are softened and lentils are beginning to brown (about 5 minutes).
Stir in garlic and cook until fragrant (about 30 seconds).
Add wine and cook until reduced by half (about 1 minute).
Stir in broth, bay leaf, coriander, turmeric, and cumin. Bring to boil.
Reduce heat to medium-low and simmer covered, until thickened and lentils are completely tender (about 1 hour).
Remove bay leaf and purée 2 cups soup until smooth.
Return puréed soup to pot, and stir in kale and parsley.
Simmer, covered, until kale is tender (about 10 minutes).
Add lemon juice, and season with salt and pepper to taste.
For a Snack, Tracy recommends dark chocolate or a GoMacro Bar.
And remember to drink plenty of water
