ZINC BOOST NOODLES
INGREDIENTS
-8 oz organic soba noodles
-½ cup organic frozen green peas
-8 shiitake mushrooms, washed, dried, and sliced into ⅛-inch-thick slices.
-2 garlic cloves, minced
-1 tsp ginger, minced
-¼ cup of liquid aminos (or tamari)
-Salt and pepper to taste
-Red pepper flakes (optional)
-2 cup organic spinach, roughly chopped
-1 Tbsp organic toasted sesame oil
-¼ cup scallions, thinly sliced
-Toasted sesame seeds (for garnish)
-Avocado (optional)
Cook the soba noodles following directions on the package.
In a wok or large frying pan, heat sesame oil over medium-high and add green peas and mushrooms.
Cook until the peas are thawed, then lower heat to medium-low and add garlic and ginger.
Sauté until fragrant, then add liquid aminos. Season with salt and pepper and red pepper flakes (if using).
Remove from heat and stir in spinach. Let it reduce a bit but not completely.
Serve on top of cooked and drained noodles.
Garnish with toasted sesame seeds and ¼ avocado (if using).
For a Snack, Tracy recommends dark chocolate or a GoMacro Bar.
And remember to drink plenty of water
Tracy also has one cup of coffee per day with oat milk.
